Ingredients
3 large eggs
3/4 cup granulated sugar
1/2 cup unsalted butter, melted and cooled
1 teaspoon pure vanilla extract (or 1/2 teaspoon anise extract)
1 3/4 cups all-purpose flour
2 teaspoons baking powder
Optional: zest of 1 lemon or orange
Instructions
- In a large mixing bowl, whisk the eggs and sugar together until the mixture becomes light and creamy—about 2 to 3 minutes.
- Slowly add the melted butter and vanilla (or anise), stirring until fully incorporated.
- Mix in the flour, baking powder, and citrus zest if using, stirring until a smooth batter forms.
- Heat the pizzelle iron according to the manufacturer’s instructions.
- Drop about 1 tablespoon of batter onto the center of each grid, close the lid, and cook for 30 to 45 seconds, or until lightly golden.
- Carefully remove each pizzelle and place flat on a wire rack to cool and crisp.
- Repeat with the remaining batter and store cooled pizzelle in an airtight container.
Notes
For a festive twist, dip half of each pizzelle in melted dark chocolate and sprinkle with crushed pistachios or almonds.
Try sandwiching two pizzelle with Nutella or jam for a decadent treat.
Let pizzelle cool completely before storing to maintain crispness.
Re-crisp soft pizzelle in a 275°F oven for 2–3 minutes.
