Ingredients
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) chickpeas, drained and rinsed

1/2 red bell pepper, finely diced
1/2 yellow bell pepper, finely diced
1/4 small red onion, finely chopped
2 tablespoons fresh parsley, chopped
2 tablespoons extra virgin olive oil
1 1/2 tablespoons apple cider vinegar
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup (optional)
Salt and freshly ground black pepper, to taste
Instructions
- In a large mixing bowl, combine the kidney beans, chickpeas, and green beans.
- Add the diced red and yellow bell peppers, red onion, and chopped parsley.
- In a separate small bowl, whisk together olive oil, apple cider vinegar, lemon juice, Dijon mustard, honey (if using), salt, and pepper.
- Pour the dressing over the bean mixture. Toss gently to coat all components well.
- Taste and adjust seasoning with additional salt, pepper, or vinegar as needed.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
