A no-bake, wholesome treat that captures the rich, creamy flavors of tiramisu in energy ball form. Naturally sweetened, vegan, and gluten-free, these bites are perfect for a quick snack or light dessert.
Ingredients
1 cup Medjool dates, pitted
1/2 cup raw cashews
1/2 cup rolled oats
2 tablespoons unsweetened cocoa powder
1 tablespoon instant espresso powder
1/2 teaspoon vanilla extract
Pinch of sea salt
1–2 tablespoons water, as needed
2 tablespoons finely shredded unsweetened coconut (optional, for rolling)
1 tablespoon cocoa powder (for dusting)
Instructions
- Pulse the cashews and oats in a food processor until finely ground.
- Add the dates, cocoa powder, espresso powder, vanilla extract, and sea salt. Pulse until the mixture starts to clump together.
- If the mixture is too dry, add water one tablespoon at a time until it sticks together when pressed.
- Roll the mixture into 1-inch balls using your hands.
- Optional: Roll the balls in shredded coconut or dust with cocoa powder for a finishing touch.
- Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage.
Notes
Swap cashews with almonds or walnuts for a different flavor.
Add a teaspoon of almond butter for a creamier texture.
