Description

A no-bake, wholesome treat that captures the rich, creamy flavors of tiramisu in energy ball form. Naturally sweetened, vegan, and gluten-free, these bites are perfect for a quick snack or light dessert.


Ingredients

1 cup Medjool dates, pitted

1/2 cup raw cashews

1/2 cup rolled oats

2 tablespoons unsweetened cocoa powder

1 tablespoon instant espresso powder

1/2 teaspoon vanilla extract

Pinch of sea salt

12 tablespoons water, as needed

2 tablespoons finely shredded unsweetened coconut (optional, for rolling)

1 tablespoon cocoa powder (for dusting)


Instructions

  1. Pulse the cashews and oats in a food processor until finely ground.
  2. Add the dates, cocoa powder, espresso powder, vanilla extract, and sea salt. Pulse until the mixture starts to clump together.
  3. If the mixture is too dry, add water one tablespoon at a time until it sticks together when pressed.
  4. Roll the mixture into 1-inch balls using your hands.
  5. Optional: Roll the balls in shredded coconut or dust with cocoa powder for a finishing touch.
  6. Store in an airtight container in the refrigerator for up to a week, or freeze for longer storage.

Notes

Swap cashews with almonds or walnuts for a different flavor.
