Description

A vibrant and refreshing Tortellini Pasta Salad made with cheese tortellini, crisp vegetables, mozzarella pearls, and zesty Italian dressing. Perfect for picnics, potlucks, or as a light, make-ahead lunch.


Ingredients

20 oz cheese tortellini (refrigerated or frozen)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1/2 cup black olives, sliced

1/2 cup mozzarella pearls

1/4 cup grated Parmesan cheese

1/3 cup Italian salad dressing (store-bought or homemade)

1 tablespoon fresh parsley, chopped

Salt and black pepper to taste


Instructions

  1. Cook the tortellini according to the package instructions. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled tortellini, cherry tomatoes, cucumber, red onion, black olives, mozzarella pearls, and Parmesan cheese.
  3. Drizzle Italian dressing over the salad and gently toss to coat evenly.
  4. Season with salt and black pepper to taste.
  5. Sprinkle chopped fresh parsley on top.
  6. Cover and chill the salad in the refrigerator for at least 30 minutes before serving.

Notes

Do not overcook the tortellini to avoid a mushy texture.

Tastes even better after chilling for a few hours or overnight.

Feel free to swap cheese tortellini with spinach tortellini for variety.

Add grilled chicken, salami, or roasted red peppers for extra flavor and protein.

If pasta seems dry after storage, add a splash of extra dressing before serving.
