Ingredients
6 cups fresh or frozen peaches, sliced
1 cup granulated sugar
2 tablespoons lemon juice

1 tablespoon cornstarch
1 tablespoon butter, cut into small cubes
1 package refrigerated pie crusts (contains 2 crusts)
1/2 cup rolled oats
1/4 cup brown sugar, packed

1/4 cup melted butter
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced peaches, granulated sugar, lemon juice, cinnamon, salt, and cornstarch. Stir to coat the peaches evenly and let the mixture sit for 10 minutes to release the juices.
- Roll out one of the pie crusts and fit it into the bottom of a 9-inch round or square baking dish. Trim any excess dough around the edges.
- Pour the peach mixture into the prepared crust and dot with cubes of butter.
- Roll out the second pie crust and cut it into strips. Lay the strips over the peach filling in a lattice pattern.
- In a small bowl, mix the oats, brown sugar, flour, and vanilla extract. Sprinkle this mixture evenly over the lattice crust.
- Drizzle the melted butter over the oat topping.
- Bake for 40-45 minutes, or until the crust is golden and the peach filling is bubbling.
- Let the cobbler cool slightly before serving.
