Description

A vibrant and flavorful dish combining tender chicken, sweet pineapple, and fragrant jasmine rice, perfect for a quick weeknight dinner or meal prep.


Ingredients

2 chicken breasts, diced

1 cup jasmine rice

2 cups water

1 cup pineapple chunks (fresh or canned)

1 tablespoon olive oil

1 tablespoon soy sauce

1 tablespoon honey

1 teaspoon garlic, minced

1/2 teaspoon ginger, grated

1/2 teaspoon ground turmeric

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)


Instructions

  1. Cook the jasmine rice with 2 cups of water according to the package instructions. Once the rice is ready, set it aside.
  2. Heat olive oil in a large skillet over medium heat. Add the diced chicken, season with salt, pepper, turmeric, and ginger, and cook for 5-7 minutes until browned and fully cooked.
  3. Add the minced garlic to the skillet and cook for 1-2 minutes until fragrant.
  4. Stir in the pineapple chunks, soy sauce, and honey, cooking for 3-4 minutes until the sauce thickens slightly and the pineapple warms through.
  5. Fluff the rice with a fork, then add it to the skillet. Stir everything together and cook for an additional 2-3 minutes to allow the flavors to meld.
  6. Remove from heat and garnish with fresh chopped cilantro before serving.

Notes

Add veggies such as bell peppers, carrots, or peas for extra nutrition and crunch.

For a spicy kick, add red pepper flakes or diced jalapeños when sautéing the chicken.

Swap jasmine rice for coconut rice for a more tropical flavor.

Grill the chicken for a smoky flavor before adding it to the pineapple mixture.
