Description

Ingredients

1 cup active sourdough starter

1/2 cup pureed fresh strawberries

1/4 cup warm water

2 1/2 cups bread flour

1 tablespoon granulated sugar

1 teaspoon salt

1/2 cup fresh diced strawberries

1/3 cup white chocolate chips

2 tablespoons flour for dusting

Additional white chocolate chips for garnish


Instructions

  1. In a large bowl, mix the sourdough starter, pureed strawberries, warm water, bread flour, sugar, and salt until a sticky dough forms.
  2. Knead the dough on a lightly floured surface for 8 to 10 minutes until smooth and elastic.
  3. Gently fold in the diced strawberries and white chocolate chips until evenly distributed.
  4. Shape the dough into a ball, place in a lightly oiled bowl, cover, and let rise in a warm spot for 4 to 6 hours until doubled in size.
  5. Reshape the dough into a round loaf and let it rise again on a parchment-lined baking sheet or in a proofing basket for another 2 to 3 hours.
  6. Preheat the oven to 450°F (230°C) with a Dutch oven inside.
  7. Dust the loaf lightly with flour, score the top, and sprinkle with extra white chocolate chips if desired.
  8. Carefully place the dough into the preheated Dutch oven, bake covered for 20 minutes, then uncovered for another 20 to 25 minutes until golden brown.
  9. Let the loaf cool completely on a wire rack before slicing.

Dice and pat dry strawberries to reduce excess moisture.

Use freeze-dried strawberries as an alternative to fresh for less moisture.

Swap white chocolate for dark or ruby chocolate for flavor variation.
