Description

Refreshing and naturally sweet watermelon popsicles made with fresh watermelon, lime juice, and optional natural sweetener. These easy frozen treats are hydrating, fruity, and perfect for hot days.


Ingredients

4 cups seedless watermelon, cubed

2 tablespoons fresh lime juice

12 tablespoons honey or maple syrup (optional)

Optional: a few fresh mint leaves

Optional: 2–3 tablespoons coconut water


Instructions

  1. Add the watermelon cubes, fresh lime juice, and honey or maple syrup (if using) to a blender. Blend until completely smooth.
  2. For a smoother texture, strain the mixture through a fine mesh sieve to remove excess pulp (optional).
  3. Pour the mixture into popsicle molds, leaving a small space at the top to allow for expansion during freezing.
  4. Insert popsicle sticks and freeze for 4–6 hours, or until fully solid.
  5. To release, run warm water over the outside of the molds for a few seconds before gently removing the popsicles.

Notes

Adjust sweetness depending on how ripe the watermelon is.

Add fresh strawberries for a watermelon-strawberry variation.

Create layered popsicles by freezing in stages with coconut milk or yogurt.

Add a pinch of chili powder or Tajín for a spicy twist.

Store in an airtight container in the freezer for up to 2 months, separating layers with parchment paper.
