Ingredients

1 cup unsalted butter, softened

½ cup powdered sugar

1 tbsp lemon zest

2 tbsp fresh lemon juice

1 ½ cups all-purpose flour

¼ cup cornstarch

½ tsp vanilla extract

½ cup powdered sugar (for coating)

½ tsp lemon zest (for coating)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat the softened butter and powdered sugar together until light and fluffy.
  3. Stir in the lemon zest, fresh lemon juice, and vanilla extract.
  4. Gradually add the flour and cornstarch, mixing until a soft dough forms.
  5. Roll the dough into 1-inch balls and place them evenly spaced on the prepared baking sheet.
  6. Bake for 10-12 minutes, just until the edges are set but not browned.
  7. While the cookies are still warm, roll each one in the powdered sugar mixed with lemon zest.
