Description
These 3-Ingredient Protein Powder Pancakes are soft, fluffy, and packed with protein for a quick and satisfying breakfast. Made with pancake mix, vanilla protein powder, and milk, they’re ready in just 15 minutes and perfect for busy mornings or meal prep.
Ingredients
1 cup (120 g) Bisquick or preferred pancake mix
1 scoop (31 g) vanilla protein powder
3/4 cup (180 ml) skim milk or preferred milk
Instructions
- In a medium mixing bowl, combine the pancake mix and vanilla protein powder. Whisk or stir until evenly distributed.
- Gradually pour in the milk while stirring gently. Mix just until combined and no large dry lumps remain. Avoid overmixing to keep the pancakes light and fluffy. If the batter is too thick, add a small splash of milk until thick but pourable.
- Heat a nonstick skillet or griddle over medium-high heat. Lightly coat the surface with nonstick cooking spray and allow it to heat thoroughly.
- Pour approximately 1/4 cup of batter onto the heated skillet for each pancake. Leave enough space between pancakes for easy flipping.
- Cook for approximately 2 minutes, until the edges begin to set and the underside is golden brown. Carefully flip with a spatula and cook for another 1–2 minutes, until golden and cooked through.
- Transfer the pancakes to a serving plate and serve warm with your favorite toppings, such as fresh berries, maple syrup, peanut butter, sliced bananas, or Greek yogurt.
Notes
Pancake mix: Bisquick creates a fluffy texture, but another complete pancake mix can be substituted. Choose a mix that does not require additional eggs or ingredients.
Protein powder: Vanilla whey protein generally blends well, but casein or plant-based protein powder can also work. Adjust the milk as needed because different powders absorb different amounts of liquid.
Milk substitutions: Replace skim milk with almond milk, oat milk, soy milk, or regular dairy milk according to preference.
Prevent dry pancakes: Avoid overmixing the batter and overcooking the pancakes. Reduce the skillet temperature if the outsides brown too quickly.
Chocolate variation: Substitute chocolate protein powder for vanilla protein powder. Add a few chocolate chips if desired.
Blueberry variation: Sprinkle fresh blueberries onto each pancake immediately after pouring the batter into the skillet.
Banana variation: Add thin banana slices to the pancakes while the first side cooks.
Cinnamon variation: Mix a little ground cinnamon into the dry ingredients for a warm, comforting flavor.
Dairy-free variation: Use plant-based protein powder, dairy-free pancake mix, and unsweetened plant-based milk. Check ingredient labels carefully.
Serving suggestions: Top with strawberries, blueberries, Greek yogurt, peanut butter, sliced bananas, or a drizzle of maple syrup.
Refrigerator storage: Cool pancakes completely and store in an airtight container for up to 3–4 days. Place parchment paper between layers to prevent sticking.
Freezer storage: Freeze cooled pancakes in a single layer until firm, then transfer to a freezer-safe bag or container. Use within 2 months for the best quality.
Microwave reheating: Heat refrigerated pancakes for approximately 20–30 seconds or frozen pancakes for 45–90 seconds, adjusting according to thickness and microwave power.
Toaster reheating: Reheat fully cooked pancakes on a low toaster setting, checking frequently to prevent overbrowning.
Skillet reheating: Warm pancakes in a nonstick skillet over low heat for approximately 1–2 minutes per side.
Meal prep tip: Cook the pancakes before storing rather than refrigerating uncooked batter, since the leavening ingredients begin working once mixed with liquid.
