Description

These easy 30-minute black bean burgers are hearty, smoky, and perfectly seasoned, with a golden, lightly crispy exterior and a tender center. Made without oats, they use simple pantry ingredients and can be cooked in a skillet, on the grill, or in the oven.

Ingredients

2 (15-ounce / 425 g) cans black beans, drained and rinsed

1 green bell pepper

½ medium white onion

2 cloves garlic

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

¼ teaspoon salt

¼ teaspoon black pepper

1 cup (60 g) panko breadcrumbs

1 large egg

Oil or cooking spray, for greasing

Optional for serving: burger buns, lettuce, sliced tomatoes, red onions, pickles, cheese, and burger sauce

Instructions

  1. Prepare the black beans: Drain and rinse the black beans thoroughly under cold water. Spread them over several layers of paper towels and allow them to dry while preparing the vegetables. Removing excess moisture helps prevent mushy burgers.
  2. Chop the vegetables: Place the green bell pepper, white onion, and garlic in a food processor. Pulse until finely chopped. Transfer to a fine-mesh sieve and press firmly with a spoon or spatula to remove as much liquid as possible.
  3. Combine the beans and seasonings: Add the dried black beans and drained vegetables to the food processor. Add the smoked paprika, cumin, chili powder, salt, and black pepper. Pulse until combined, leaving some larger bean pieces for a hearty texture.
  4. Add the breadcrumbs and egg: Transfer the mixture to a large bowl. Add the panko breadcrumbs and egg, stirring until evenly incorporated. For easier shaping, optionally refrigerate the mixture for 30 minutes.
  5. Shape the patties: Scoop approximately ½ cup of the mixture per burger and shape into 5 firm, evenly sized patties. Press gently but firmly so they hold together during cooking.
  6. Stovetop method: Lightly grease a large skillet and heat over medium-high heat. Add the patties and cook for 5–7 minutes per side until golden brown, firm, and cooked through.
  7. Alternative grilling method: Preheat the grill to medium-high heat. Place the patties on a greased sheet of aluminum foil and grill for approximately 7 minutes per side until browned and firm.
  8. Alternative oven method: Preheat the oven to 400°F (204°C). Arrange the patties on a lightly greased baking sheet and bake for 15–20 minutes, flipping halfway through.
  9. Check for doneness: Whichever cooking method you choose, ensure the egg-containing patties reach an internal temperature of 160°F (71°C).
  10. Assemble and serve: Place the cooked patties on burger buns and add lettuce, tomato, red onion, pickles, cheese, and your favorite burger sauce. Serve immediately with your preferred side dishes.

Notes

Remove excess moisture: Thoroughly dry the black beans and drain the chopped vegetables to prevent soft, crumbly patties.

For firmer patties: Refrigerate the burger mixture for at least 30 minutes before shaping. This optional chilling time is not included in the 30-minute total.

Without a food processor: Mash the beans with a fork or potato masher, leaving some larger pieces. Finely chop and drain the vegetables before combining everything by hand.

Spicy variation: Add chopped jalapeños, cayenne pepper, or hot sauce to the mixture for extra heat.

Cheesy variation: Mix shredded cheddar or pepper jack into the mixture, or melt a slice of cheese over each patty during the final minute of cooking.

Vegan option: Replace the egg with 1 tablespoon ground flaxseed mixed with 3 tablespoons water. Let stand for 5–10 minutes until thickened. Use vegan breadcrumbs, buns, and toppings. The patties may be slightly more delicate.

Gluten-free option: Substitute gluten-free breadcrumbs for regular panko and serve with gluten-free buns or lettuce wraps.

Southwest variation: Add corn kernels, chopped cilantro, and lime zest. Serve with avocado, salsa, and chipotle sauce.

Extra-crispy burgers: Cook in a lightly oiled skillet and allow a golden crust to form before flipping. Avoid turning the patties too frequently.

Make ahead: Prepare the uncooked mixture and refrigerate in a covered container for up to 24 hours before shaping and cooking.

Refrigeration: Cool cooked patties and store in an airtight container in the refrigerator for 3–4 days.

Freezing: Freeze cooked, cooled patties individually until firm, then transfer to a freezer-safe bag or container with parchment paper between layers. Use within 2–3 months for best quality.

Skillet reheating: Heat refrigerated patties in a lightly greased skillet over medium heat for approximately 3–5 minutes per side.

Oven reheating: Reheat at 350°F (175°C) for approximately 10–15 minutes or until thoroughly heated. Frozen patties may require additional time.

Microwave reheating: Heat on a microwave-safe plate in short intervals until hot throughout. The exterior will be softer than with skillet or oven reheating.

Leftover safety: Reheat cooked patties to an internal temperature of 165°F (74°C).

Serving suggestions: Pair with sweet potato fries, roasted vegetables, coleslaw, or a fresh green salad. For a lighter option, serve in lettuce wraps instead of buns.

Nutrition: Values are approximate per burger patty, excluding buns, toppings, sauces, and optional cooking oil. Actual values depend on ingredient brands and portion sizes.
