Description

These Air Fryer Garlic Butter Steak Bites feature tender, juicy sirloin seasoned with smoky spices and tossed in rich, flavorful garlic butter. Ready in just 20 minutes, they’re perfect for an easy weeknight dinner or a delicious protein-packed appetizer.

Ingredients

16 oz top sirloin filet, cut into bite-size pieces

½ tablespoon (8g) olive oil

½ tablespoon (6g) brown sugar

1 teaspoon kosher salt

1 teaspoon black pepper

1 teaspoon chili powder

¼ teaspoon garlic powder, for the steak seasoning

¼ teaspoon onion powder

1½ tablespoons (21g) butter

¼ teaspoon garlic powder, for the garlic butter sauce

¼ teaspoon red pepper flakes

¼ teaspoon parsley flakes

Instructions

  1. Cut the top sirloin filet into evenly sized, bite-size pieces to ensure uniform cooking. Place the steak pieces in a large mixing bowl, drizzle with olive oil, and toss until lightly coated.
  2. In a small bowl, combine the brown sugar, kosher salt, black pepper, chili powder, ¼ teaspoon garlic powder, and onion powder. Mix thoroughly, then sprinkle the seasoning blend over the steak. Toss until every piece is evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for approximately 5 minutes.
  4. Arrange the seasoned steak bites in the air fryer basket in a single layer, leaving space between the pieces for proper air circulation. Cook in batches if necessary.
  5. Air fry at 400°F (200°C) for approximately 4–6 minutes, shaking the basket halfway through cooking. Check the internal temperature with a meat thermometer. For food safety, whole cuts of beef should reach at least 145°F (63°C) followed by a 3-minute rest.
  6. While the steak cooks, melt the butter in a small microwave-safe bowl or saucepan. Stir in the remaining ¼ teaspoon garlic powder, red pepper flakes, and parsley flakes until well combined.
  7. Transfer the cooked steak bites to a serving bowl and allow them to rest briefly. Pour the warm garlic butter sauce over the steak and toss gently until every piece is evenly coated.
  8. Serve immediately while warm and juicy, alongside your favorite vegetables, mashed potatoes, rice, or salad.

Notes

Best steak cuts: Top sirloin filet provides excellent tenderness and flavor. Ribeye, New York strip, or beef tenderloin are also delicious alternatives.

Even cooking: Cut the steak into similar-sized pieces and avoid overcrowding the air fryer basket. Cook in batches if necessary.

Temperature tip: Use a meat thermometer to check doneness. The recommended minimum safe internal temperature for whole cuts of beef is 145°F (63°C), followed by a 3-minute rest.

Extra spicy variation: Increase the red pepper flakes, add a pinch of cayenne pepper, or finish with a little hot sauce.

Lemon garlic variation: Add fresh lemon juice and lemon zest to the melted garlic butter for a bright, citrusy finish.

Herb butter variation: Replace dried parsley with freshly chopped parsley, thyme, or rosemary.

Garlic Parmesan variation: Sprinkle freshly grated Parmesan cheese over the warm steak bites after tossing them in garlic butter.

Steak and mushroom variation: Sauté mushrooms separately with butter and garlic, then combine them with the finished steak bites.

Lower-sugar option: Omit the brown sugar for a savory seasoning blend without added sugar.

Serving suggestions: Pair with mashed potatoes, roasted potatoes, steamed broccoli, green beans, cauliflower rice, pasta, or a fresh garden salad.

Make ahead: Cut the steak into bite-size pieces and refrigerate in an airtight container for up to 1 day before cooking. Prepare the dry seasoning mixture separately and store in a sealed container.

Refrigeration: Store cooked steak bites in an airtight container in the refrigerator for up to 3–4 days. Refrigerate within 2 hours of cooking and keep any extra garlic butter with the steak.

Freezing: Freeze cooled steak bites in a freezer-safe container or resealable freezer bag for up to 2–3 months for best quality. Thaw overnight in the refrigerator before reheating.

Air fryer reheating: Preheat to 350°F (175°C) and reheat steak bites for approximately 2–4 minutes, checking frequently to prevent overcooking. Reheat leftovers to 165°F (74°C).

Stovetop reheating: Warm steak bites in a skillet over medium-low heat with a small amount of butter, stirring occasionally until the internal temperature reaches 165°F (74°C).

Microwave reheating: Place steak bites in a loosely covered microwave-safe dish and heat in short intervals, stirring between intervals until thoroughly reheated to 165°F (74°C).

Alternative cooking method: Cook the seasoned steak bites in a lightly oiled skillet over medium-high heat, working in batches until browned and cooked to a safe internal temperature. Toss with prepared garlic butter before serving.
