Description

These air fryer zucchini fries are crispy on the outside, tender on the inside, and coated with savory Parmesan and seasoned breadcrumbs. They make a quick and healthier snack, appetizer, or side dish with minimal oil and plenty of flavor.


Ingredients

3 medium zucchini, cut into 3-inch fry shapes

1/2 cup all-purpose flour

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon Italian seasoning

2 large eggs, beaten

1 cup breadcrumbs

1/3 cup grated Parmesan cheese

2 tablespoons avocado oil cooking spray


Instructions

  1. In a shallow plate, mix together the flour, salt, black pepper, and Italian seasoning.
  2. Beat the eggs in a small bowl until smooth.
  3. In another bowl, combine the breadcrumbs and grated Parmesan cheese.
  4. Dip each zucchini fry into the flour mixture, then into the beaten eggs, and finally coat with the breadcrumb-Parmesan mixture.
  5. Lightly spray the air fryer basket with avocado oil cooking spray.
  6. Arrange the zucchini fries in a single layer in the basket and lightly spray the tops.
  7. Air fry at 400°F for about 9 minutes, or until crispy and golden brown.

Use panko breadcrumbs for extra crunch.
