Ingredients
3 medium zucchini, cut into 3-inch fry shapes
1/2 cup all-purpose flour

1 teaspoon black pepper
1 tablespoon Italian seasoning
2 large eggs, beaten
1 cup breadcrumbs
1/3 cup grated Parmesan cheese
2 tablespoons avocado oil cooking spray
Instructions
- In a shallow plate, mix together the flour, salt, black pepper, and Italian seasoning.
- Beat the eggs in a small bowl until smooth.
- In another bowl, combine the breadcrumbs and grated Parmesan cheese.
- Dip each zucchini fry into the flour mixture, then into the beaten eggs, and finally coat with the breadcrumb-Parmesan mixture.
- Lightly spray the air fryer basket with avocado oil cooking spray.
- Arrange the zucchini fries in a single layer in the basket and lightly spray the tops.
- Air fry at 400°F for about 9 minutes, or until crispy and golden brown.
- Serve immediately while hot and crunchy.
