Description
Flaky puff pastry is filled with creamy vanilla-lemon cream cheese and sweet apricot preserves, then finished with a light powdered sugar glaze. These bakery-style Danishes are perfect for breakfast, brunch, dessert, or afternoon tea.
Ingredients
2 sheets puff pastry, thawed
1 cup apricot preserves
1 egg
1 tablespoon water
8 oz cream cheese, softened
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/2 teaspoon lemon zest
1/4 cup powdered sugar, for the glaze
1–2 teaspoons milk, for the glaze
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon zest. Mix until smooth and creamy.
- Lightly roll out the thawed puff pastry sheets on a clean work surface. Cut each sheet into equal squares or rectangles to make 8 pastries total.
- Spoon a small amount of the cream cheese mixture into the center of each piece of pastry, leaving room around the edges.
- Add a spoonful of apricot preserves over the cream cheese filling, taking care not to overfill the pastries.
- Shape the pastry as desired, leaving the center exposed for an open Danish or folding the pastry into pockets, braids, or another decorative shape.
- Whisk the egg with 1 tablespoon water to make an egg wash. Brush the egg wash over the exposed pastry and edges.
- Arrange the pastries on the prepared baking sheet, leaving space between them for expansion.
- Bake for 18–22 minutes, or until the puff pastry is risen, crisp, and golden brown.
- Remove the pastries from the oven and allow them to cool slightly. Meanwhile, stir the powdered sugar with 1–2 teaspoons milk until smooth and drizzleable.
- Drizzle the glaze over the slightly cooled Danishes and serve.
Notes
Apricot jam can be substituted for apricot preserves; use thick jam and avoid overfilling.
Try raspberry, strawberry, blueberry, cherry, or peach preserves for different flavors.
Orange zest can replace the lemon zest, or extra lemon zest can be added for a stronger citrus flavor.
Sliced almonds can be sprinkled over the pastries before baking, or chopped toasted almonds or pecans can be added after glazing.
For a fruit-only version, omit the cream cheese filling. For extra almond flavor, add a small amount of almond extract to the cream cheese mixture.
Keep the puff pastry cool while working with it for the best rise and flaky layers.
Assembled pastries can be covered and refrigerated for a few hours before baking.
Store completely cooled leftovers in an airtight container in the refrigerator for up to 3–4 days.
Reheat in a 300–350°F (150–175°C) oven for several minutes or in an air fryer at a moderate temperature to restore crispness. Avoid microwaving when possible.
Baked, completely cooled pastries can be frozen. For best results, freeze them without glaze, reheat in the oven, cool slightly, and add fresh glaze before serving.
