Ingredients
2 cups rolled oats
1/3 cup cocoa powder
1 teaspoon baking powder
1/4 teaspoon salt
2 eggs
1/3 cup maple syrup
1/4 cup coconut oil
1 1/2 cups almond milk
1 teaspoon vanilla extract
1 cup chocolate chips
Peanut butter, whipped cream, maple syrup, or chopped nuts for topping (optional)
Instructions
- Preheat the oven to 350°F (175°C) and lightly grease an 8×8-inch baking pan.
- In a large bowl, combine the rolled oats, cocoa powder, baking powder, and salt.
- In a separate bowl, whisk together the eggs, almond milk, maple syrup, coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until well combined.
- Fold in most of the chocolate chips, reserving a handful for the topping.
- Spread the mixture evenly into the prepared baking pan.
- Sprinkle the remaining chocolate chips over the top.
- Bake for 45 to 50 minutes, or until the oatmeal is set and the center is cooked through.
- Cool for about 10 minutes before slicing and serving with optional toppings.
