Ingredients

Instructions
- Whisk together the flour, ground ginger, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt in a medium bowl.
- Beat the cold cubed butter with the brown sugar and granulated sugar until creamy and well combined.
- Mix in the egg, molasses, and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients and mix until a thick cookie dough forms.
- Fold in the white chocolate chips until evenly distributed.
- Scoop the dough into 8 large cookie dough balls and freeze for 30 minutes.
- Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
- Arrange the dough balls several inches apart on the prepared baking sheets.
- Bake for 14 to 17 minutes, until the tops are set and the edges are lightly golden while the centers remain soft.
- Cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely.
