Description

A fresh breakfast fruit salad with juicy peaches, apricots, cantaloupe, and blackberries, topped with crunchy cinnamon pecan granola and served with creamy honey-lemon Greek yogurt.


Ingredients

2 peaches or nectarines

4 apricots

¼ ripe cantaloupe melon

50g blackberries

Juice of ½ lemon

250g Greek yogurt

2 teaspoons clear honey

Zest of 1 lemon

25g porridge oats

25g pecans, roughly chopped

½ teaspoon ground cinnamon

1 tablespoon clear honey


Instructions

  1. Preheat the oven to 150°C, or 130°C for a fan oven (Gas 2), and prepare a small baking tray.
  2. Combine the porridge oats, chopped pecans, and ground cinnamon in a bowl. Spread the mixture evenly over the baking tray, drizzle with 1 tablespoon of clear honey, and stir until lightly coated.
  3. Bake the granola for about 30 minutes, stirring halfway through, until lightly golden. Transfer to a bowl and leave to cool completely so it becomes crisp.
  4. Combine the Greek yogurt with 2 teaspoons of clear honey and most of the lemon zest, reserving a little zest for serving.
  5. Remove the stones from the peaches or nectarines and apricots, then slice them. Peel and deseed the cantaloupe and cut it into slices or bite-sized pieces.
  6. Arrange the peaches, apricots, cantaloupe, and blackberries on a serving platter and drizzle with the fresh lemon juice.
  7. Just before serving, scatter the cooled pecan granola over the fruit. Serve with the honey-lemon Greek yogurt and finish with the reserved lemon zest.

Notes

Add the granola immediately before serving to keep it crisp.

For a berry variation, use strawberries, raspberries, blueberries, or additional blackberries.

For an autumn version, replace the peaches and apricots with sliced apples and pears and add extra cinnamon if desired.

Pecans can be replaced with walnuts, almonds, or hazelnuts, or with pumpkin or sunflower seeds for a nut-free variation.

For a dairy-free version, use a thick unsweetened plant-based yogurt and a suitable alternative sweetener if needed.

Store the fruit, yogurt, and granola separately. Refrigerate prepared fruit for 1–2 days and yogurt for 2–3 days. Keep completely cooled granola in an airtight container at room temperature for several days.

If the granola loses its crunch, warm it briefly in a low oven and allow it to cool completely before serving.
