Description

Soft and chewy pumpkin cookies made with nutty brown butter, pure maple syrup, dark brown sugar, and warm autumn spices. Each cookie is rolled in cinnamon sugar for lightly crisp edges and a tender, flavorful center.

Ingredients

For the Pumpkin Cookie Dough:

1 cup (220g) unsalted butter

1 1/2 cups (280g) dark brown sugar, packed

1 large egg yolk

3 tablespoons pure maple syrup

1 teaspoon vanilla extract

1/3 cup (80g) pumpkin puree

2 1/4 cups (280g) all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 teaspoons pumpkin pie spice

1/2 teaspoon ground cinnamon

For the Cinnamon-Sugar Coating:

2 tablespoons brown sugar

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

Instructions

  1. Brown the butter: Melt the unsalted butter in a saucepan over medium heat, stirring frequently. Continue cooking until the butter foams, turns amber, and develops golden-brown milk solids with a nutty aroma. Immediately remove from the heat and transfer to a heatproof container, scraping in the browned bits. Refrigerate for approximately 20 minutes until cooled but still liquid.
  2. Preheat the oven: Preheat the oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  3. Combine the dry ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, pumpkin pie spice, and 1/2 teaspoon ground cinnamon until evenly combined. Set aside.
  4. Mix the butter and sugar: In a large mixing bowl, whisk the cooled brown butter with the packed dark brown sugar until the mixture resembles wet, clumpy sand.
  5. Add the wet ingredients: Whisk in the egg yolk, maple syrup, vanilla extract, and pumpkin puree until smooth and thoroughly combined.
  6. Prepare the cookie dough: Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Mix just until a soft dough forms, avoiding overmixing. If the dough is too soft to scoop, refrigerate for 15–20 minutes.
  7. Make the cinnamon-sugar coating: In a shallow bowl, combine the brown sugar, granulated sugar, and 1 teaspoon ground cinnamon. Stir until evenly blended.
  8. Scoop and coat: Portion the dough into approximately 2-ounce balls using a large cookie scoop or 1/4-cup measuring cup. Roll each portion in the cinnamon-sugar mixture until completely coated. Arrange on the prepared baking sheet, leaving approximately 3 inches between cookies. Bake 4–5 cookies per batch to allow sufficient spreading.
  9. Bake the cookies: Bake for 12–15 minutes, until the edges are set and slightly darkened while the centers remain puffed and slightly underdone. Avoid overbaking to maintain a soft, chewy texture.
  10. Cool and serve: Allow the cookies to rest on the baking sheet for a few minutes before transferring them to a wire rack. Cool completely for the best chewy texture, then serve.

Notes

Use pure pumpkin puree rather than pumpkin pie filling to control the sweetness and spice levels.

Dark brown sugar provides a deeper caramel flavor, while pure maple syrup gives the best maple taste.

For particularly wet pumpkin puree, gently blot away excess moisture with a paper towel to prevent cakey cookies.

Do not overmix the dough or overbake the cookies. Slightly underdone centers will firm up as the cookies cool.

If the dough is too soft or sticky, refrigerate it for 15–20 minutes before scooping.

For chocolate chip pumpkin cookies, fold 3/4 cup of semi-sweet or dark chocolate chips into the dough.

For maple glazed cookies, drizzle cooled cookies with a glaze made from powdered sugar, maple syrup, and a splash of milk.

For pumpkin pecan cookies, add 1/2 cup of chopped toasted pecans to the dough.

For white chocolate pumpkin cookies, fold in 1/2 cup of white chocolate chips.

For extra spice, add a small pinch of ground ginger, nutmeg, or cloves.

Melted butter can replace browned butter, although the cookies will have a less pronounced nutty flavor. Cool the melted butter before mixing.

Homemade pumpkin puree can be used if it is thick and well-drained.

Store cooled cookies in an airtight container at room temperature for up to 4 days. A small piece of bread placed in the container without touching the cookies can help maintain softness.

Refrigerate cookies in an airtight container for up to 1 week. Bring to room temperature before serving.

Freeze completely cooled cookies in a freezer-safe container for up to 3 months, separating layers with parchment paper. Thaw at room temperature.

To reheat, microwave an individual cookie for 8–10 seconds or warm in a 300°F (150°C) oven for 3–5 minutes.

Serve with hot coffee, tea, or milk for a cozy autumn treat.

Timing is approximate and may increase if baking multiple batches or chilling the dough.
