Description

Budino al Cioccolato is a rich and silky Italian chocolate pudding made with dark chocolate, whole milk, and vanilla. This easy, egg-free dessert is perfectly creamy, deeply chocolatey, and ideal for making ahead.

Ingredients

2 1/4 cups whole milk, divided

1/4 cup granulated sugar

4 oz (115 g) dark chocolate (60–70% cocoa), finely chopped

3 tablespoons cornstarch

1 teaspoon vanilla extract

Optional toppings: whipped cream, fresh raspberries, chocolate shavings, or chopped nuts

Instructions

  1. Pour 2 cups of whole milk into a medium saucepan and add the granulated sugar. Heat over medium heat, stirring occasionally, until the sugar dissolves and the milk becomes hot and steaming. Avoid bringing it to a vigorous boil.
  2. Reduce the heat to medium-low and add the finely chopped dark chocolate. Stir continuously until the chocolate melts completely and the mixture becomes smooth and glossy.
  3. In a small bowl, whisk the cornstarch with the remaining 1/4 cup of cold whole milk until completely smooth and free of lumps.
  4. Slowly pour the cornstarch slurry into the warm chocolate mixture while whisking constantly. Continue cooking over medium-low heat for 5–7 minutes, stirring continuously, until the pudding thickens enough to coat the back of a spoon.
  5. Remove the saucepan from the heat and stir in the vanilla extract until fully incorporated.
  6. Divide the warm chocolate pudding evenly among four serving glasses or ramekins. Press plastic wrap directly against the surface of each pudding to prevent a skin from forming.
  7. Refrigerate for at least 2 hours, or until completely chilled and set.
  8. Remove the plastic wrap and garnish with whipped cream, fresh raspberries, chocolate shavings, or chopped nuts if desired. Serve chilled.

Notes

Choose high-quality dark chocolate containing approximately 60–70% cocoa for a balanced, rich chocolate flavor.

For an espresso variation, add 1 teaspoon of instant espresso powder to the warm milk before melting the chocolate.

For an orange chocolate variation, stir finely grated orange zest into the pudding along with the vanilla extract.

For a hazelnut variation, add a small spoonful of hazelnut spread and garnish with toasted chopped hazelnuts.

For a more intense chocolate flavor, use dark chocolate containing 70–75% cocoa.

For a dairy-free version, substitute whole milk with creamy oat milk or coconut milk and choose dairy-free dark chocolate.

For a sweeter pudding, substitute milk chocolate for dark chocolate and slightly reduce the added sugar.

Always dissolve cornstarch in cold milk before adding it to the hot chocolate mixture to prevent lumps.

Stir constantly while thickening to prevent scorching and ensure a smooth, silky consistency.

Refrigerate for at least 2 hours. For a firmer texture, chill for 3–4 hours or overnight.

Store leftovers covered in the refrigerator for up to 3–4 days.

Freeze in freezer-safe containers for up to 1 month. Thaw overnight in the refrigerator, noting that freezing may slightly affect the creamy texture.

To serve warm, gently reheat over low heat while stirring frequently. Add a splash of milk if needed and avoid boiling.

Prepare up to one day ahead and add whipped cream, fresh berries, or crunchy garnishes immediately before serving.
