Description

A tender vanilla cake topped with glossy caramelized fresh apricots and a buttery brown sugar layer. This easy upside down cake makes a beautiful summer dessert without the need for frosting.


Ingredients

68 fresh apricots, halved and pitted

1/3 cup brown sugar

3 tablespoons unsalted butter

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2/3 cup granulated sugar

2 large eggs

1/2 cup milk

1/3 cup vegetable oil

1 teaspoon vanilla extract

1/2 teaspoon cinnamon, optional


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. Melt the butter in the cake pan over low heat, then sprinkle the brown sugar evenly over the melted butter.
  3. Arrange the apricot halves cut-side down over the brown sugar and butter, placing them close together.
  4. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and optional cinnamon.
  5. In a separate mixing bowl, beat the eggs and granulated sugar until light and fluffy.
  6. Add the milk, vegetable oil, and vanilla extract to the egg mixture and mix until smooth.
  7. Gradually fold the dry ingredients into the wet ingredients just until a smooth batter forms. Do not overmix.
  8. Gently pour the batter over the apricots and spread it into an even layer without disturbing the fruit.
  9. Bake for 35–40 minutes, or until the top is golden and a toothpick inserted into the sponge portion of the cake comes out clean or with a few moist crumbs.
  10. Let the cake rest in the pan for 10–15 minutes, then carefully invert it onto a serving plate while still warm.

Notes

Choose ripe but still firm apricots so they retain their shape during baking.

Peaches, nectarines, or plums can be substituted for the fresh apricots.

For extra warmth, add a pinch of nutmeg or ground ginger along with the optional cinnamon.

Chopped almonds or pecans can be scattered over the brown sugar before adding the apricots.

A little almond extract can be added alongside the vanilla for extra stone-fruit flavor.

Serve slightly warm or at room temperature with whipped cream, vanilla ice cream, or crème fraîche.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze individually wrapped slices in a freezer-safe container for up to 2 months and thaw overnight in the refrigerator.

If using canned apricot halves, drain and pat them thoroughly dry before arranging them in the pan.

Do not allow the cake to cool completely before inverting, as the caramelized sugar may stick to the pan.
