Description

Ingredients

2 large eggs, separated

1/4 cup melted butter

3 tablespoons maple syrup

2 cups milk

1 teaspoon vanilla extract

1/4 cup brown sugar

2 1/2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

2 teaspoons ground cinnamon

1/2 teaspoon ground nutmeg

1 medium apple, grated

3 large apples, sliced

3 tablespoons butter

1/2 cup brown sugar

1 teaspoon ground cinnamon

1 teaspoon cornstarch

1 teaspoon water


Instructions

  1. Separate the eggs and beat the egg whites until stiff peaks form. Set aside.
  2. In a large bowl, whisk together the melted butter, maple syrup, egg yolks, milk, vanilla extract, and brown sugar until smooth.
  3. Add the flour, baking powder, salt, cinnamon, nutmeg, and grated apple. Stir until just combined without overmixing.
  4. Gently fold the beaten egg whites into the batter using a spatula.
  5. Preheat and lightly grease the waffle maker. Cook the batter according to the manufacturer’s instructions until the waffles are golden brown and crisp.
  6. Meanwhile, melt the butter in a skillet over medium heat. Add the sliced apples, brown sugar, and cinnamon, and cook until the apples are tender and caramelized.
  7. Mix the cornstarch with the water, stir it into the apple mixture, and cook until the sauce is glossy and slightly thickened.
  8. Serve the warm waffles topped with the caramelized cinnamon apples and drizzle with additional maple syrup if desired.

Notes

Honeycrisp, Granny Smith, or Fuji apples work especially well.

Add chopped pecans or walnuts to the topping for extra crunch.

A pinch of cloves or allspice adds deeper spice flavor.
