Ingredients
1 tablespoon olive oil
1 medium red onion, diced
1 tablespoon minced garlic
2 pounds lean ground beef
1½ tablespoons chili powder
2 teaspoons paprika
2 teaspoons ground cumin
2 teaspoons ground oregano
1 teaspoon onion powder
¾ teaspoon kosher salt
½ teaspoon black pepper
1 (16-ounce) bottle taco sauce, divided
½ cup low-sodium chicken or beef broth
2 cups shredded Pepper Jack cheese, divided
1 (12-ounce) box jumbo pasta shells
Nonstick cooking spray
¼ cup chopped green onions
1 Roma tomato, diced
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the diced red onion and sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for another 1–2 minutes until fragrant.
- Add the ground beef to the skillet, breaking it into small pieces with a wooden spoon. Cook for approximately 5 minutes until the beef begins to brown. Drain any excess grease if necessary.
- Sprinkle the chili powder, paprika, ground cumin, oregano, onion powder, kosher salt, and black pepper over the beef. Stir thoroughly and continue cooking for 2–3 minutes until the beef is completely cooked through and the spices are fragrant.
- Pour 1 cup of taco sauce and ½ cup of low-sodium chicken or beef broth into the skillet. Reduce the heat to medium and simmer for 8–10 minutes, stirring occasionally, until the sauce thickens and coats the beef.
- Remove the skillet from the heat. Stir in 1 cup of shredded Pepper Jack cheese until melted and evenly incorporated into the beef filling. Set aside.
- Meanwhile, bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to the package directions until al dente. Drain and rinse briefly under cool water to stop the cooking process and make the shells easier to handle.
- Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick cooking spray. Spread approximately ¼ cup of the remaining taco sauce over the bottom of the dish.
- Carefully fill each cooked jumbo pasta shell with approximately 2 tablespoons of the seasoned beef mixture. Arrange the stuffed shells in the prepared baking dish with their openings facing upward. Repeat until the filling is used or the baking dish is full.
- Drizzle the remaining taco sauce evenly over the stuffed shells. Cover the baking dish tightly with aluminum foil and bake for 20 minutes.
- Carefully remove the foil and sprinkle the remaining 1 cup of shredded Pepper Jack cheese evenly over the shells. Return the dish to the oven, uncovered, and bake for another 5–10 minutes until the cheese is melted and bubbly.
- Remove the baking dish from the oven and allow the stuffed shells to rest for approximately 5 minutes. Garnish with chopped green onions and diced Roma tomato. Serve warm.
Notes
For a milder flavor, substitute Monterey Jack, mild cheddar, Colby Jack, or a Mexican-style shredded cheese blend for Pepper Jack cheese.
For extra heat, add diced jalapeños, crushed red pepper flakes, cayenne pepper, or hot taco sauce to the beef filling.
Substitute ground turkey, ground chicken, or cooked shredded chicken for ground beef if desired.
For a vegetarian variation, replace the beef with black beans, corn, sautéed bell peppers, and mushrooms, and use vegetable broth.
For an extra-creamy filling, stir a little softened cream cheese into the seasoned beef mixture.
Add drained black beans or sweet corn to the filling for extra texture and flavor.
Cook the pasta shells just until al dente to prevent tearing and overcooking during baking. Prepare a few extra shells in case some break.
Make ahead by assembling the stuffed shells, covering tightly, and refrigerating for up to 24 hours before baking. Add a few extra minutes to the baking time if cooking directly from the refrigerator.
Refrigerate leftovers in an airtight container within 2 hours of cooking and store for up to 3–4 days.
Freeze assembled or fully cooked stuffed shells in freezer-safe containers for up to 2–3 months for the best quality.
Reheat refrigerated shells in a covered baking dish at 350°F (175°C) for approximately 15–20 minutes, adding a splash of broth or taco sauce to prevent drying. Heat until the center reaches 165°F (74°C).
For frozen leftovers, thaw overnight in the refrigerator before reheating until thoroughly heated.
Serve with a fresh green salad, Mexican-style rice, roasted vegetables, corn salad, or sautéed bell peppers.
Optional toppings include sour cream, sliced avocado, chopped cilantro, fresh salsa, or additional diced tomatoes.
