Cherry and Pistachio Fridge Cake

Description

An elegant no-bake fridge cake layered with digestive biscuits, rich pistachio mascarpone cream, and tart homemade cherry compote. An overnight chill transforms the biscuits into soft, cake-like layers.


Ingredients

150g pistachio crème

250g mascarpone

1 teaspoon vanilla bean paste

50g caster sugar

300ml double cream

360g digestive biscuits

50g pistachio kernels, roughly chopped

Handful of fresh cherries, for serving

300g frozen cherries

50g caster sugar

Juice of 1 lemon

1 tablespoon cornflour

Pinch of salt


Instructions

  1. Add the frozen cherries, 50g caster sugar, lemon juice, cornflour, and salt to a saucepan. Cook over medium heat for about 5 minutes, stirring frequently, until bubbling and thickened. Gently crush some of the cherries while leaving larger pieces intact. Transfer to a heatproof bowl and cool completely.
  2. Line a 900g loaf tin, approximately 10–12cm by 20–22cm, with baking paper, leaving enough overhang to lift the cake out later.
  3. Place the pistachio crème, mascarpone, vanilla bean paste, and 50g caster sugar in a large bowl. Beat until smooth and evenly combined.
  4. Add the double cream and whisk for approximately 1 minute, or until thick and almost at stiff peaks. Avoid overwhipping.
  5. Arrange a layer of digestive biscuits over the bottom of the prepared tin, breaking biscuits into smaller pieces as needed to cover the base.
  6. Spread approximately one-quarter of the pistachio cream over the biscuits, followed by one-third of the cooled cherry compote.
  7. Continue layering the digestive biscuits, pistachio cream, and cherry compote until the tin is full, finishing with a smooth layer of pistachio cream.
  8. Scatter the chopped pistachio kernels evenly over the top. Cover the tin with plastic wrap and refrigerate for at least 12 hours.
  9. About 30 minutes before serving, transfer the cake to the freezer to firm it up for cleaner slicing.
  10. Remove the cake from the freezer and leave it at room temperature for approximately 5 minutes. Lift it from the tin using the baking paper, smooth the sides if necessary, decorate with fresh cherries, slice with a sharp knife, and serve chilled.

Notes

Prepare the cake the evening before serving to give the biscuits enough time to soften overnight.

Fresh pitted cherries can be substituted for frozen cherries in the compote.

Frozen raspberries or mixed berries can replace the cherries for a different fruit flavor.

For a chocolate variation, add finely chopped dark chocolate between the layers.

Digestive biscuits can be replaced with almond-flavored biscuits.

For extra pistachio flavor, scatter finely chopped pistachios between some of the cream layers.

Full-fat cream cheese can be used instead of mascarpone, although the filling will be tangier and have a slightly different texture.

For clean slices, use a large sharp knife and wipe the blade between cuts.

Store covered in the refrigerator and enjoy within about 3 days.

Individual slices can be wrapped and frozen, then thawed gradually in the refrigerator before serving.
