Description

A creamy, cheesy chicken casserole made with tender shredded chicken, sour cream, cheddar cheese, and a crisp buttery Ritz cracker topping. It is an easy comfort-food dinner perfect for family meals, potlucks, and make-ahead preparation.


Ingredients

2 (10.5-ounce) cans condensed cream of chicken soup

1 cup sour cream (240 g)

1½ teaspoons onion powder

1½ teaspoons garlic powder

1 teaspoon kosher salt

1 teaspoon ground black pepper

8 cups shredded cooked chicken (about 1 kg or 2 rotisserie chickens)

2 cups shredded cheddar cheese, divided (225 g)

2 full sleeves Ritz crackers, lightly crushed (250 g)

4 tablespoons melted butter (56 g)


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly coat a 13×9-inch casserole dish with cooking spray.
  2. In a large mixing bowl, combine the condensed cream of chicken soup, sour cream, onion powder, garlic powder, kosher salt, and black pepper. Stir until smooth and evenly combined.
  3. Fold in the shredded cooked chicken and 1½ cups of the shredded cheddar cheese. Stir until the chicken is evenly coated, then spread the mixture in the prepared casserole dish.
  4. In a medium bowl, toss the lightly crushed Ritz crackers with the melted butter until evenly coated.
  5. Sprinkle the buttered cracker mixture evenly over the chicken filling, then scatter the remaining ½ cup cheddar cheese over the top.
  6. Bake uncovered for 35–40 minutes, until the filling is bubbling around the edges and the topping is lightly golden brown.
  7. Remove from the oven and let the casserole rest for 15–20 minutes before portioning and serving.

Notes

For added vegetables, fold in cooked broccoli, peas, spinach, or mixed vegetables. Drain vegetables well to prevent a watery filling.

Monterey Jack, Colby Jack, mozzarella, or pepper Jack can replace some of the cheddar cheese.

Buttery breadcrumbs, crushed cornflakes, or another crisp cracker can be substituted for Ritz crackers.

Dried parsley, paprika, or Italian seasoning can be added to the topping for extra flavor.

Cooked rice or pasta can be mixed into the filling for a heartier casserole; add extra soup or sour cream as needed to maintain a creamy consistency.

For make-ahead preparation, refrigerate the assembled chicken filling and add the buttered crackers and remaining cheese just before baking.

Store leftovers covered or in an airtight container in the refrigerator for up to 3–4 days.

Reheat individual portions in the microwave, or cover loosely with foil and reheat at 350°F (175°C) in the oven. Remove the foil near the end to help crisp the topping.

For best freezing results, freeze the creamy chicken filling without the cracker topping, then add freshly buttered crackers and cheese before baking.

Serve with green beans, roasted broccoli, asparagus, salad, roasted vegetables, rice, mashed potatoes, or dinner rolls.
