Description

This fresh and colorful Chickpea Cucumber Salad combines crisp cucumbers, juicy cherry tomatoes, creamy avocado, Kalamata olives, and tender chickpeas tossed in a tangy honey-Dijon marinade. Ready in just 20 minutes, it’s a satisfying Mediterranean-inspired salad perfect for lunch, meal prep, or a refreshing side dish.

Ingredients

1 can (15 oz / 400 g) chickpeas, drained and rinsed, or 1½ cups cooked chickpeas

2 cups cucumber, diced

1½ cups cherry tomatoes, halved

½ cup Kalamata olives, halved

⅓ cup shallot, chopped

¾ cup corn, fresh, canned, or thawed from frozen

⅓ cup fresh parsley, finely chopped

1 avocado, diced

4 oz crumbled feta cheese, optional

4 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon dried oregano

¾ teaspoon salt, or to taste

Black pepper, to taste

Instructions

  1. Prepare the honey-Dijon marinade by combining the extra virgin olive oil, red wine vinegar, Dijon mustard, honey, dried oregano, salt, and black pepper in a medium mixing bowl. Whisk until smooth and well blended. Taste and adjust the seasoning if needed.
  2. Add the drained and rinsed chickpeas to the marinade. Stir gently until evenly coated, then let them marinate while preparing the remaining ingredients. For enhanced flavor, optionally warm the chickpeas in the microwave for about 30 seconds before adding them to the dressing.
  3. In a large serving bowl, combine the diced cucumber, halved cherry tomatoes, Kalamata olives, chopped shallot, corn, and finely chopped parsley. Cut the vegetables into similar bite-sized pieces for a balanced texture.
  4. Pour the marinated chickpeas and all of the honey-Dijon dressing into the bowl with the vegetables. Toss gently until everything is evenly coated.
  5. Add the diced avocado and crumbled feta cheese, if using, just before serving. Carefully fold them into the salad with a large spoon to avoid crushing the avocado.
  6. Serve immediately for the freshest texture, or refrigerate briefly for a cooler salad with more developed flavors. Enjoy as a light lunch, refreshing side dish, or alongside grilled vegetables, chicken, fish, or warm pita bread.

Notes

For the best texture, use English or Persian cucumbers, which have crisp flesh and relatively small seeds.

For a vegan variation, omit the feta cheese and replace the honey with maple syrup.

Add fresh mint, dill, or basil for extra Mediterranean-inspired flavor.

For a spicy variation, add red pepper flakes, cayenne pepper, or finely chopped jalapeño to the marinade.

For additional protein, add grilled chicken, cooked quinoa, or extra chickpeas.

Replace the red wine vinegar with fresh lemon juice, white wine vinegar, or apple cider vinegar if preferred.

Add lemon zest for a brighter citrus flavor.

To prevent browning, add the avocado immediately before serving or toss it lightly with lemon juice.

For meal prep, store the marinated chickpeas and chopped vegetables separately, then combine shortly before serving.

Refrigerate leftovers in an airtight container for up to 3 days. Keep the avocado separate whenever possible.

Freezing the assembled salad is not recommended because the cucumber, tomatoes, and avocado can become mushy after thawing.

Serve cold or at room temperature. Do not reheat the assembled salad.

This recipe makes 4 generous main-dish servings or approximately 6 smaller side-dish portions.

Nutrition values are approximate and vary depending on ingredient brands, portion sizes, and whether optional feta cheese is included.
