Description

Soft and chewy Chocolate Chip Banana Oatmeal Cookies made with ripe bananas, rolled oats, creamy almond butter, chocolate chips, and crunchy walnuts. These naturally sweetened cookies are perfect for breakfast, snacking, or a wholesome homemade dessert.

Ingredients

2 large ripe bananas, mashed (about 3/4 cup)

1/2 cup almond butter

3 tablespoons maple syrup

1 teaspoon vanilla extract

2 cups rolled oats

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 cup chocolate chips

1/3 cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking.
  2. In a medium mixing bowl, mash the ripe bananas with a fork until mostly smooth. Add the almond butter, maple syrup, and vanilla extract. Stir until creamy and well combined.
  3. In a separate large bowl, combine the rolled oats, salt, cinnamon, chocolate chips, and chopped walnuts. Mix until evenly distributed.
  4. Pour the banana mixture into the dry ingredients. Stir gently until everything is evenly coated and no dry patches of oats remain. The mixture should be thick, moist, and slightly sticky.
  5. Using a cookie scoop or tablespoon, portion the mixture onto the prepared baking sheet, leaving a little space between each cookie. Gently flatten each portion with your fingers or the back of a spoon, as the cookies will not spread much during baking.
  6. Bake for 12–15 minutes, or until the edges are lightly golden and the centers appear set. Avoid overbaking to maintain a soft and chewy texture.
  7. Remove the baking sheet from the oven and allow the cookies to rest for about 5 minutes before transferring them to a wire rack. Enjoy slightly warm or cool completely before storing.

Notes

Use very ripe bananas with brown spots for the best natural sweetness and a moist, tender texture.

Old-fashioned rolled oats provide the best chewy texture. Quick oats can be substituted, but the cookies may be softer. Avoid steel-cut oats.

Replace almond butter with creamy peanut butter, cashew butter, or sunflower seed butter if desired.

For double chocolate cookies, add 1–2 tablespoons of unsweetened cocoa powder and use dark chocolate chips.

For a nut-free version, substitute sunflower seed butter for almond butter, omit the walnuts, and use nut-safe chocolate chips.

Add 1/4 cup unsweetened shredded coconut for extra texture and a subtle tropical flavor.

For a cinnamon raisin variation, replace the chocolate chips with raisins and slightly increase the cinnamon.

For vegan cookies, use dairy-free chocolate chips and verify that all remaining ingredients are vegan.

For gluten-free cookies, use certified gluten-free rolled oats and check the labels of all other ingredients.

The maple syrup can be omitted if the bananas are very ripe. Add a splash of milk or extra mashed banana if the mixture becomes too dry.

These cookies are naturally softer than traditional cookies. Allow them to cool completely to help them firm up.

Store completely cooled cookies in an airtight container at room temperature for up to 2 days in a cool kitchen.

Refrigerate in an airtight container for up to 5 days, separating layers with parchment paper if needed.

Freeze cooled cookies in a freezer-safe container or resealable bag for up to 3 months. Freeze in a single layer first to prevent sticking.

Reheat refrigerated cookies in the microwave for 10–15 seconds. Thaw frozen cookies before reheating.

For slightly firmer edges, warm the cookies in a 300°F (150°C) oven for approximately 5 minutes.

Serve with Greek yogurt, milk, or another protein-rich food for a more balanced breakfast.
