Description
Soft, chewy homemade chocolate chip cookies sandwich a thick layer of creamy vanilla ice cream for a nostalgic frozen dessert. Perfect for summer gatherings, parties, or an easy make-ahead treat.
Ingredients
1/2 cup butter, softened
1/2 cup brown sugar
1/4 cup white sugar
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chocolate chips
1 pint vanilla ice cream, slightly softened
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream the softened butter, brown sugar, and white sugar together until light and fluffy.
- Add the egg and vanilla extract and mix until smooth and evenly incorporated.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing just until a cookie dough forms. Avoid overmixing.
- Fold in the chocolate chips until evenly distributed.
- Scoop the dough into evenly sized balls and arrange them on the prepared baking sheet with space between each cookie. Flatten each ball slightly.
- Bake for 10–12 minutes, until the edges are lightly golden and the centers are still slightly soft.
- Transfer the cookies to a wire rack and cool completely.
- Pair cookies of approximately the same size. Place a generous scoop of slightly softened vanilla ice cream on the flat side of one cookie.
- Top with a second cookie and press gently until the ice cream spreads toward the edges.
- Wrap each sandwich individually and freeze for at least 1 hour before serving.
Notes
Do not overbake the cookies; slightly soft, chewy cookies are easier to bite after freezing.
Make sure the cookies are completely cool before adding the ice cream.
Vanilla ice cream can be replaced with chocolate, cookies-and-cream, strawberry, mint chocolate chip, caramel, coffee, or another favorite flavor.
Chocolate chips can be replaced with mini chocolate chips, chopped chocolate, butterscotch chips, or peanut butter chips.
For decorated edges, roll the assembled sandwiches in sprinkles, chopped nuts, or cookie crumbs before freezing.
Store sandwiches individually wrapped in an airtight freezer-safe container to help prevent freezer burn and unwanted odors.
For a softer texture, let frozen sandwiches sit at room temperature for 3–5 minutes before serving.
