Ingredients
⅓ cup salted butter
1 heaping cup diced onion
2 cups sliced carrots
2 cups chopped celery
1 tablespoon minced garlic
3 tablespoons flour
1 teaspoon table salt
¾ teaspoon black pepper
½ teaspoon paprika
½ teaspoon dried thyme
½ teaspoon dried parsley
1½ pounds uncooked chicken
6 to 8 cups chicken broth
8 ounces uncooked egg noodles
½ cup heavy cream
Instructions
- Melt the butter in a large soup pot over medium heat.
- Add the diced onion, carrots, and celery. Cook until the vegetables are tender.
- Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Add the flour, salt, black pepper, paprika, thyme, and parsley. Stir until the vegetables are evenly coated.
- Slowly pour in 6 cups of chicken broth while stirring continuously until smooth.
- Add the uncooked chicken and bring the soup to a boil. Cover, reduce the heat, and simmer for 15 to 20 minutes, or until the chicken is fully cooked.
- Remove the chicken, shred or chop it into bite-sized pieces, and return it to the pot.
- Stir in the uncooked egg noodles and cook for about 10 minutes, or until tender.
- Reduce the heat to low and gently stir in the heavy cream until fully combined.
- Taste and adjust the seasoning as needed. Serve warm.
Notes
Add mushrooms, peas, corn, spinach, or kale for extra flavor and nutrition.
Use rotisserie chicken to save time; add it after the vegetables are cooked.
For a lighter soup, substitute half-and-half for the heavy cream.
To make gluten-free, use gluten-free pasta in place of egg noodles.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Freeze before adding the noodles and cream for best texture; freeze for up to 3 months.
