Description

Creamy Chicken Noodle Soup is a warm, hearty one-pot meal made with tender chicken, fresh vegetables, egg noodles, and a rich, velvety broth finished with heavy cream. It’s the perfect comfort food for cozy family dinners or chilly evenings.


Ingredients

⅓ cup salted butter

1 heaping cup diced onion

2 cups sliced carrots

2 cups chopped celery

1 tablespoon minced garlic

3 tablespoons flour

1 teaspoon table salt

¾ teaspoon black pepper

½ teaspoon paprika

½ teaspoon dried thyme

½ teaspoon dried parsley

pounds uncooked chicken

6 to 8 cups chicken broth

8 ounces uncooked egg noodles

½ cup heavy cream


Instructions

  1. Melt the butter in a large soup pot over medium heat.
  2. Add the diced onion, carrots, and celery. Cook until the vegetables are tender.
  3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the flour, salt, black pepper, paprika, thyme, and parsley. Stir until the vegetables are evenly coated.
  5. Slowly pour in 6 cups of chicken broth while stirring continuously until smooth.
  6. Add the uncooked chicken and bring the soup to a boil. Cover, reduce the heat, and simmer for 15 to 20 minutes, or until the chicken is fully cooked.
  7. Remove the chicken, shred or chop it into bite-sized pieces, and return it to the pot.
  8. Stir in the uncooked egg noodles and cook for about 10 minutes, or until tender.
  9. Reduce the heat to low and gently stir in the heavy cream until fully combined.
  10. Taste and adjust the seasoning as needed. Serve warm.

Notes

Add mushrooms, peas, corn, spinach, or kale for extra flavor and nutrition.

Use rotisserie chicken to save time; add it after the vegetables are cooked.

For a lighter soup, substitute half-and-half for the heavy cream.

To make gluten-free, use gluten-free pasta in place of egg noodles.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze before adding the noodles and cream for best texture; freeze for up to 3 months.
