2 tablespoons extra virgin olive oil, for roasting apples
1 teaspoon ground cinnamon, for roasting apples
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice, for roasting apples
1 tablespoon extra virgin olive oil, for sautéing
1 tablespoon unsalted butter
3 garlic cloves, minced
4 cups organic vegetable stock, divided
1 tablespoon raw honey or maple syrup
4 tablespoons organic all-purpose flour
1 teaspoon sea salt
1 teaspoon black pepper
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1/2 teaspoon ground cinnamon, for the soup
1/8 teaspoon ground allspice, for the soup
2 cups organic pumpkin puree
1 cup organic heavy cream
1 cup freshly grated Parmesan cheese
Homemade croutons, for serving
Instructions
- Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper or aluminum foil.
- Arrange the sliced apples in a single layer on the prepared baking sheet. Drizzle with 2 tablespoons of olive oil and sprinkle with 1 teaspoon cinnamon, nutmeg, and 1/2 teaspoon allspice. Roast for 15–20 minutes until tender and lightly golden. Remove from the oven and allow to cool slightly.
- While the apples roast, prepare homemade croutons by cutting your preferred bread into cubes and toasting until golden and crispy. Set aside for serving.
- Heat 1 tablespoon olive oil in a medium Dutch oven over medium-high heat. Add the minced garlic and sauté for 1–2 minutes, stirring frequently until fragrant without allowing it to burn.
- Transfer the sautéed garlic to a high-powered blender. Add the roasted apples and 2 cups of vegetable stock. Blend until completely smooth and creamy. Set aside.
- In the same Dutch oven, melt the unsalted butter over medium heat. Add the flour, sea salt, black pepper, smoked paprika, garlic powder, oregano, basil, thyme, remaining 1/2 teaspoon cinnamon, and remaining 1/8 teaspoon allspice. Stir continuously for approximately 1 minute to cook the flour and release the spices’ aromas.
- Gradually pour the remaining 2 cups of vegetable stock into the Dutch oven, whisking constantly to prevent lumps. Continue whisking until the mixture becomes smooth and begins to thicken.
- Pour the blended roasted apple mixture into the Dutch oven. Add the pumpkin puree, heavy cream, and honey or maple syrup. Whisk thoroughly until everything is fully combined and the soup develops a smooth, golden-orange consistency.
- Bring the soup to a gentle boil for 1–2 minutes, stirring frequently. Reduce the heat to low and simmer for another 5–6 minutes, stirring occasionally until thick, creamy, and velvety.
- Add the freshly grated Parmesan cheese and stir until completely melted and incorporated into the soup. Taste and adjust the seasonings if necessary.
- Remove the Dutch oven from the heat. Ladle the warm soup into individual serving bowls and garnish with crispy homemade croutons. Add extra Parmesan cheese or fresh herbs if desired. Serve immediately.
Notes
Best apples: Honeycrisp, Gala, and Sweet Tango apples provide natural sweetness and caramelize beautifully when roasted. Granny Smith apples can be used for a slightly tangier flavor.
Pumpkin puree: Use 100% pure canned pumpkin puree or homemade pumpkin puree. Avoid pumpkin pie filling because it contains added sugar and spices.
Dairy-free variation: Replace heavy cream with full-fat coconut milk, use olive oil instead of butter, and omit Parmesan or substitute a dairy-free alternative.
Vegan variation: Use maple syrup instead of honey, coconut cream instead of heavy cream, olive oil instead of butter, plant-based Parmesan, and vegan croutons.
Spicy variation: Add a pinch of cayenne pepper or red pepper flakes for a gentle kick of heat.
Extra creamy variation: Add a splash of heavy cream or blend the finished soup until completely silky. Garnish with a swirl of cream if desired.
Butternut squash variation: Replace the pumpkin puree with roasted butternut squash for a naturally sweet alternative.
Crunchy topping alternative: Substitute toasted pumpkin seeds for homemade croutons.
Adjusting thickness: Simmer uncovered for a few extra minutes to thicken the soup, or gradually add vegetable stock to achieve a thinner consistency.
Make ahead: Prepare the soup one day in advance and refrigerate. Reheat gently before serving and add freshly prepared croutons just before eating.
Refrigeration: Store cooled soup in an airtight container in the refrigerator for up to 3–4 days. Keep croutons separate to maintain their crispiness.
Freezing: Freeze in freezer-safe containers for up to 2–3 months, leaving room for expansion. For the best texture, freeze before adding heavy cream and Parmesan, then incorporate the dairy ingredients during reheating.
Stovetop reheating: Warm over low to medium-low heat, stirring frequently until heated through. Add a splash of vegetable stock or cream if the soup becomes too thick.
Microwave reheating: Heat individual portions in a microwave-safe bowl in short intervals, stirring between intervals until thoroughly hot.
Serving suggestions: Pair with crusty artisan bread, grilled cheese sandwiches, roasted vegetables, fresh green salad, savory quiche, or a hearty grain salad.
Holiday serving: Serve smaller portions as an elegant Thanksgiving or autumn holiday appetizer.
