Ingredients
2 cups dry green or brown lentils
1 large potato, peeled
1 large onion, peeled
2 whole carrots, peeled
Water, enough to cover
Salt, to taste
1 cup breadcrumbs, plus more if needed
1 cup fresh parsley, finely chopped
1–2 teaspoons paprika
1 teaspoon ground cumin
Black pepper, to taste
Chili flakes, optional
Oil, for shallow frying
22 Turkish-style bread rolls or pita breads
Vegan yogurt-based sauce or vegan tzatziki, as needed
Fresh tomato slices, as needed
Onion slices mixed with fresh parsley and sumac, as needed
Grilled long green peppers, optional
Pickles, optional
Instructions
- Place the dry lentils in a large pot. Add the peeled potato, onion, and carrots. Pour in enough water to cover everything and season lightly with salt. Bring to a boil, reduce the heat, and simmer for approximately 25–30 minutes, or until the lentils and vegetables are completely tender.
- Drain the cooked lentils and vegetables thoroughly to remove excess moisture. Transfer to a large bowl and mash until mostly smooth, leaving a few small pieces for texture.
- Add the breadcrumbs, finely chopped parsley, paprika, ground cumin, salt, black pepper, and optional chili flakes. Mix thoroughly until evenly combined. If the mixture is too soft or sticky, gradually add more breadcrumbs until it holds together. Let rest for 5–10 minutes if needed.
- Take small portions of the lentil mixture and shape them firmly into slightly flattened oval or square patties. Keep the patties approximately the same size for even cooking.
- Heat a thin layer of oil in a large frying pan over medium heat. Add the patties in batches without overcrowding. Fry until deeply golden and crispy on both sides, allowing the crust to set before flipping. Transfer to a paper towel-lined plate to drain excess oil.
- Prepare the sandwich toppings by slicing the tomatoes and combining thinly sliced onions with fresh parsley and sumac. Prepare the vegan yogurt sauce or vegan tzatziki. If using green peppers, grill until softened and lightly charred. Slice open the Turkish-style bread rolls or pita breads.
- Spread a generous layer of vegan yogurt sauce inside each bread roll. Add fresh tomato slices and a spoonful of the seasoned onion mixture. Arrange 3–4 crispy lentil patties inside each sandwich, depending on their size.
- Add optional grilled green peppers and pickles. Gently press the bread together and serve immediately while the patties are warm and crispy.
Notes
Green or brown lentils work best because they provide a hearty texture and hold together well when mashed.
Drain the lentils and vegetables thoroughly before mashing. Excess moisture can make the patties difficult to shape.
If the patty mixture is too soft, add breadcrumbs gradually or refrigerate it for 20–30 minutes before shaping.
For extra-crispy patties, lightly coat them in additional breadcrumbs before frying and make sure the oil is properly heated.
For a spicy variation, increase the chili flakes, add a pinch of cayenne pepper, or serve with spicy vegan yogurt sauce.
For oven-baked patties, arrange them on a lightly oiled baking sheet, brush with oil, and bake at 400°F (200°C) for 20–25 minutes, flipping halfway through.
For air-fried patties, cook at 375°F (190°C) for approximately 12–15 minutes, adjusting according to thickness.
For a gluten-free version, use certified gluten-free breadcrumbs and gluten-free bread or lettuce wraps.
For a Mediterranean-inspired variation, add cucumbers, shredded lettuce, roasted red peppers, and fresh lemon juice.
For a bread-free meal, serve the patties over rice, quinoa, or fresh greens with vegetables and vegan yogurt sauce.
To substitute canned lentils, use approximately 5 cups of drained, rinsed cooked lentils in place of the dry lentils. Cook the potato, onion, and carrots separately before combining.
Serve with cucumber salad, roasted vegetables, or crispy oven-baked potatoes.
Store cooled, cooked patties in an airtight container in the refrigerator for up to 3–4 days. Keep the bread, sauce, and fresh vegetables separate to prevent sogginess.
Freeze cooled patties in a single layer until firm, then transfer to a freezer-safe container with parchment between layers. Freeze for up to 2–3 months for best quality.
Reheat patties in a lightly oiled skillet over medium heat for a few minutes per side, or in a 375°F (190°C) oven for 10–15 minutes.
For air fryer reheating, heat at 350°F (175°C) for approximately 5–7 minutes. Reheat leftovers to an internal temperature of 165°F (74°C).
For meal prep, prepare the patties ahead of time and assemble sandwiches just before serving to maintain their crispy texture.
The reported 390 calories per serving is an estimate and varies with bread size, sauce quantity, oil absorption, and the number of patties used.
