Description

This easy Crustless Coconut Pie has a soft, custard-like center, chewy shredded coconut, and a lightly golden top. It delivers rich coconut and vanilla flavor without the work of making pastry dough.


Ingredients

1 cup shredded coconut, sweetened or unsweetened

1/2 cup granulated sugar

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

4 large eggs

1 cup whole milk

1 teaspoon vanilla extract

1/4 cup butter, melted and cooled

Whipped cream, optional for serving

Toasted coconut flakes, optional for serving


Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a pie dish or baking dish with butter.
  2. In a large mixing bowl, whisk the eggs, granulated sugar, whole milk, vanilla extract, and cooled melted butter until smooth and evenly combined.
  3. Add the all-purpose flour, baking powder, and salt. Whisk until the batter is smooth and no noticeable flour lumps remain.
  4. Stir in the shredded coconut until evenly distributed throughout the batter.
  5. Pour the mixture into the prepared pie dish and gently smooth the top.
  6. Bake for 35–40 minutes, until the top is lightly golden and the center is set but still slightly soft.
  7. Remove from the oven and cool for at least 15 minutes before slicing to allow the custard-like filling to set.
  8. Serve warm or chilled, topped with whipped cream and toasted coconut flakes if desired.

Notes

Sweetened or unsweetened shredded coconut can be used; unsweetened coconut produces a slightly less sweet pie.

For stronger coconut flavor, replace a portion of the whole milk with coconut milk.

Add finely grated lemon, lime, or orange zest for a bright citrus variation.

A pinch of cinnamon or nutmeg, or a small amount of almond extract, can be added for extra flavor.

For additional texture, lightly toast the shredded coconut and let it cool before adding it to the batter.

Serve with powdered sugar, whipped cream, toasted coconut, fresh berries, or caramel sauce.

Store cooled leftovers covered or in an airtight container in the refrigerator for 3–4 days.

Serve leftovers chilled or briefly microwave individual slices until just warmed through.
