Description

This rich Double Chocolate Zucchini Bread is incredibly moist, deeply chocolatey, and filled with melty chocolate chips. Grated zucchini keeps every slice soft and tender without adding a noticeable vegetable flavor.


Ingredients

1 1/2 cups grated zucchini

1 1/2 cups all-purpose flour

1/2 cup cocoa powder

1 cup sugar

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1/2 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan thoroughly.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate large bowl, whisk the vegetable oil, sugar, eggs, and vanilla extract until smooth.
  4. Stir the grated zucchini into the wet ingredients until evenly combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not overmix.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.

Notes

Add chopped walnuts or pecans for extra crunch.

Use dark chocolate chips for a richer flavor.

Add 1 teaspoon espresso powder to enhance the chocolate flavor.

Leave the zucchini peel on for added color and nutrients.
