Description
A hearty savory bake with flaky salmon, spinach, tomatoes, tender bagel pieces, creamy eggs, and pockets of cream cheese. Homemade everything bagel seasoning adds a flavorful, lightly crunchy finish.
Ingredients
½ tablespoon sesame seeds
1 teaspoon poppy seeds
½ teaspoon garlic granules
½ teaspoon sea salt flakes
2 tablespoons olive oil, plus extra for greasing
1 onion, finely sliced
2 garlic cloves, finely sliced
100 g baby spinach
1 × 212 g can wild Pacific red salmon, drained
2 plain bagels, cut into bite-sized pieces
100 g baby plum tomatoes, halved
6 medium eggs
200 mL whole milk
100 mL double cream
1 teaspoon Dijon mustard
100 g cream cheese
Black pepper, to taste
Salad leaves, for serving
Instructions
- Preheat the oven to 180°C (160°C fan/Gas 4) and lightly grease a 25 × 17 cm baking dish.
- Combine the sesame seeds, poppy seeds, garlic granules, and sea salt flakes in a small bowl to make the everything bagel seasoning. Set aside.
- Heat the olive oil in a large frying pan over medium heat. Add the sliced onion with a small pinch of salt and cook for 3–4 minutes, until softened.
- Add the sliced garlic and cook for 30 seconds. Stir in the baby spinach and cook just until wilted.
- Check the drained salmon for bones and remove any before flaking it into the spinach mixture. Stir gently and season with black pepper and a little salt if needed.
- Transfer the salmon and spinach mixture to the prepared baking dish. Scatter the bagel pieces and halved tomatoes evenly throughout.
- Whisk together the eggs, whole milk, double cream, Dijon mustard, 1 teaspoon of the prepared everything bagel seasoning, and a little black pepper.
- Pour the egg mixture evenly over the salmon, vegetables, and bagel pieces. Dot small spoonfuls of cream cheese over the top and sprinkle with the remaining everything bagel seasoning.
- Bake for 30–35 minutes, until the center is completely set and the top is golden brown.
- Let the bake rest for about 10 minutes before slicing. Serve warm with fresh salad leaves.
Notes
For a smoked salmon variation, replace the canned salmon with smoked salmon and reduce the added salt.
Baby spinach can be replaced with chopped kale or Swiss chard; cook sturdier greens a little longer before assembling.
Sautéed mushrooms, bell peppers, spring onions, or asparagus can be added for extra vegetables.
Try adding mature cheddar, mozzarella, Gruyère, or feta for a different cheese flavor.
Sesame, onion, or everything bagels can replace plain bagels. Reduce the added seasoning slightly when using everything bagels.
Cooked fresh salmon can be used instead of canned salmon.
For a lighter bake, replace the double cream with additional whole milk or lighter cream.
Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat until piping hot.
Leftovers can be frozen in individual portions, thawed overnight in the refrigerator, and reheated thoroughly.
