3 ripe mangos, diced
1 medium red bell pepper, chopped
1/2 cup chopped red onion
1/4 cup packed fresh cilantro leaves, chopped
1 jalapeño, seeded and minced
Juice of 1 large lime (about 1/4 cup)
1/8 to 1/4 teaspoon salt, to taste
Instructions
- Combine the diced mangos, chopped red bell pepper, red onion, cilantro, and minced jalapeño in a large serving bowl.
- Pour the fresh lime juice over the mixture.
- Gently stir until all ingredients are evenly combined.
- Season with salt to taste and stir again.
- Let the salsa rest for at least 10 minutes to allow the flavors to blend.
- Serve chilled with tortilla chips, tacos, grilled fish, salads, or your favorite Mexican-inspired dishes.
Notes
Add diced avocado for a creamy variation.
Mix in diced pineapple or peaches for extra sweetness.
Leave some jalapeño seeds in or add a pinch of cayenne for more heat.
Add diced cucumber for extra crunch and freshness.
Use a mix of lime and fresh orange juice for additional citrus flavor.
Store in an airtight container in the refrigerator for up to 3 days and stir before serving.
Do not freeze, as the texture of the fruit and vegetables will deteriorate.
