Description
Authentic Italian Fritto Misto combines tender calamari, juicy shrimp, small whole fish, and baby octopus in a light, golden, crispy coating. Finished with fresh parsley, sea salt, and lemon wedges, this classic Mediterranean seafood dish is perfect for sharing.
Ingredients
300 g calamari, cleaned and sliced into rings
250 g medium shrimp, peeled and deveined
250 g small whole fish, cleaned
150 g baby octopus, cleaned and cut into bite-sized pieces
150 g all-purpose flour
50 g fine semolina flour
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 liter vegetable or sunflower oil, for frying
1 lemon, cut into wedges
2 tablespoons fresh parsley, finely chopped
Additional sea salt, for finishing
Instructions
- Prepare the seafood: Rinse the calamari, shrimp, small fish, and baby octopus under cold running water. Pat everything thoroughly dry with paper towels to remove excess moisture and ensure a crispy coating.
- Heat the oil: Pour the vegetable or sunflower oil into a deep, heavy-bottomed pot, leaving sufficient space above the oil. Heat to 180°C (350°F), checking the temperature with a kitchen thermometer.
- Prepare the coating: In a shallow dish, combine the all-purpose flour, fine semolina flour, sea salt, and freshly ground black pepper. Mix thoroughly until evenly combined.
- Coat the seafood: Working in small batches, lightly toss the seafood in the seasoned flour mixture until evenly coated. Shake off excess flour to create a thin, delicate crust.
- Fry the seafood: Carefully lower small batches of coated seafood into the hot oil without overcrowding. Fry calamari rings for approximately 2–3 minutes, shrimp for 2–3 minutes, small whole fish for 3–4 minutes, and baby octopus for 3–4 minutes. Cook until lightly golden and cooked through, adjusting the time according to size and thickness. Allow the oil to return to 180°C (350°F) between batches.
- Drain the seafood: Remove the golden, crispy seafood using a slotted spoon or spider strainer. Transfer to a wire rack set over a baking sheet to drain excess oil while preserving the crispy texture.
- Season and serve: While the seafood is still hot, sprinkle with additional sea salt and freshly chopped parsley. Arrange on a serving platter with fresh lemon wedges and serve immediately for the best flavor and crunch.
Notes
For the crispiest results, thoroughly dry the seafood before coating and maintain the frying oil at approximately 180°C (350°F).
A combination of all-purpose flour and fine semolina flour creates a light, delicate crust with extra crunch.
Avoid overcrowding the pot because adding too much seafood at once lowers the oil temperature and can produce greasy results.
Use fresh calamari, shrimp, small fish, and baby octopus whenever possible. Adjust the seafood selection according to seasonal availability.
For a simpler variation, prepare the recipe using only calamari rings and shrimp.
For a Mediterranean vegetable variation, add thinly sliced zucchini, eggplant, or fennel, coating and frying the vegetables separately.
For a spicy version, add a pinch of crushed red pepper flakes or cayenne pepper to the flour mixture.
For a gluten-free variation, replace the all-purpose flour and semolina with rice flour and cornstarch. Use certified gluten-free ingredients and prevent cross-contact.
For extra Mediterranean flavor, add finely grated lemon zest and dried oregano to the flour mixture.
Serve with garlic aioli made from mayonnaise, minced garlic, lemon juice, and a pinch of salt, if desired.
Serve immediately with lemon wedges, arugula salad, roasted vegetables, Italian tomato salad, or crusty bread.
To prepare ahead, clean and portion the seafood, mix the dry coating ingredients, and cut the lemon wedges. Coat the seafood only immediately before frying.
Store leftovers in an airtight container in the refrigerator at 4°C (40°F) or below within two hours of cooking. Consume within 1–2 days for the best quality.
To reheat in the oven, arrange leftovers on a wire rack over a baking sheet and heat at 200°C (400°F) for approximately 5–8 minutes, until the internal temperature reaches 74°C (165°F).
To reheat in an air fryer, arrange seafood in a single layer and heat at 180°C (350°F) for approximately 3–5 minutes, checking frequently and ensuring the internal temperature reaches 74°C (165°F).
Freezing cooked Fritto Misto is not recommended because the coating may become soggy and the seafood can lose its tender texture.
