Ingredients

1/4 cup ghee or butter, divided

1 tablespoon olive oil

1 lb Yukon Gold potatoes, cut into 1/2-inch cubes

3 garlic cloves, minced

1 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon sea salt

1/4 teaspoon ground black pepper

1 1/4 lb sirloin steak, cut into 1/2-inch cubes

Fresh chopped parsley, for garnish

Additional salt and black pepper, to season the steak


Instructions

  1. Heat a large cast iron skillet over medium heat. Add the olive oil and 2 tablespoons of the ghee or butter.
  2. Add the potatoes, garlic, thyme, oregano, sea salt, and black pepper. Cook for 8 to 10 minutes, stirring every 1 to 2 minutes, until the potatoes are golden brown and fork-tender.
  3. Transfer the potatoes and any browned bits to a plate and set aside.
  4. Increase the heat to medium-high and melt the remaining 2 tablespoons of ghee or butter in the skillet.
  5. Add the steak cubes, season lightly with salt and pepper, and sear undisturbed for about 2 minutes.
  6. Stir the steak and cook for another 1 to 2 minutes, or until it reaches your preferred doneness.
  7. Return the potatoes to the skillet and toss everything together until evenly coated in the garlic butter.
  8. Garnish with freshly chopped parsley and serve immediately.

Notes

Substitute sirloin with ribeye, New York strip, or tenderloin if desired.

Add mushrooms, onions, or bell peppers for extra flavor and texture.

For a spicy kick, stir in crushed red pepper flakes or cayenne pepper.

Fresh rosemary or Italian seasoning can be used instead of thyme and oregano.

Squeeze fresh lemon juice over the finished dish for a brighter flavor.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
