Description

Ingredients

2 1/4 cups all-purpose flour

2 teaspoons ground ginger

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

2 teaspoons baking soda

1/4 teaspoon salt

3/4 cup unsalted butter, softened

1 cup brown sugar

1/4 cup molasses

1 large egg

1 teaspoon vanilla extract

1/2 cup granulated sugar

1 cup powdered sugar


Instructions

  1. Whisk together the flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt in a medium bowl.
  2. In a large mixing bowl, beat the butter and brown sugar until light and creamy.
  3. Add the molasses, egg, and vanilla extract and mix until fully combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  5. Cover the dough and refrigerate for at least 1 hour until firm enough to handle.
  6. Preheat the oven to 350°F (175°C) and line baking trays with parchment paper.
  7. Scoop tablespoon-sized portions of dough and roll into balls.
  8. Coat each dough ball in granulated sugar, then generously in powdered sugar.
  9. Place the cookies on the prepared baking trays, leaving space between them.
  10. Bake for 10–12 minutes until the cookies spread and develop crinkled tops.
  11. Cool on the baking tray for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Add finely chopped crystallized ginger for extra texture and spice.

Mix in white chocolate chips for a sweeter variation.

Use dark molasses for a deeper, richer flavor.

Add a pinch of cardamom to complement the gingerbread spices.
