Description

This gluten-free bread loaf is wholesome, tender, and easy to slice, with a rich, slightly nutty flavor from almond and coconut flour. It is perfect for toast, sandwiches, or serving alongside soups and salads.


Ingredients

1 cup almond flour

1 cup arrowroot flour

1/3 cup coconut flour

1 teaspoon sea salt

1 1/4 cups filtered water

2 teaspoons maple syrup

2 teaspoons active dry yeast

1 1/2 tablespoons very finely ground chia seeds

2 tablespoons organic psyllium husk powder

1 egg, beaten, for brushing


Instructions

  1. In a large bowl, combine the almond flour, arrowroot flour, coconut flour, and sea salt.
  2. Heat the filtered water to 110°F, then stir in the maple syrup and active dry yeast.
  3. Add the ground chia seeds and psyllium husk powder to the yeast mixture, stir well, and let sit briefly until thickened.
  4. Pour the wet mixture into the flour mixture and stir with a wooden spoon until a sticky dough forms.
  5. Knead the dough for about 1 minute, cover with a damp towel, and let rise for 1 hour.
  6. About 15 minutes before the rise is complete, preheat the oven to 425°F and place a large sheet pan inside.
  7. Divide the dough into 2 equal loaves, brush with beaten egg, and place on the hot sheet pan lined with parchment paper.
  8. Bake for 35 minutes, or until the bread reaches an internal temperature of 205°F.
  9. Allow the loaves to cool completely before slicing and serving.

Notes

Add rosemary, thyme, or oregano for a savory variation.

For a sweeter loaf, add a little extra maple syrup and a pinch of cinnamon.

Top with sesame seeds, sunflower seeds, or flaxseeds before baking for added texture.

Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.

Freeze sliced bread in a freezer-safe bag and reheat in a toaster or oven before serving.
