Description

These Greek-Style Grilled Chicken Tenders are marinated in lemon, garlic, olive oil, and herbs, then grilled until juicy and flavorful. A light Mediterranean-inspired meal perfect for weeknight dinners, meal prep, or outdoor gatherings.

Ingredients

1 lb chicken tenders

2 tbsp olive oil

Juice of 1 lemon

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried thyme

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

2 tbsp fresh parsley, chopped

Instructions

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, oregano, thyme, paprika, salt, and black pepper.
  2. Add the chicken tenders and coat them evenly in the marinade.
  3. Cover and refrigerate for at least 30 minutes.
  4. Heat a grill or skillet over medium-high heat and lightly oil the surface if needed.
  5. Cook the chicken tenders for 5 to 7 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for a few minutes.
  7. Garnish with fresh parsley and serve warm with your favorite side dishes.

Notes

Add 1 tablespoon Greek yogurt to the marinade for extra tenderness.

Fresh oregano and thyme can be used for a brighter herbal flavor.

Top with crumbled feta cheese for a Greek-inspired variation.

Add a pinch of red pepper flakes for heat.

Thread onto soaked skewers before grilling to make chicken kebabs.

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze for up to 3 months and thaw overnight before reheating.

Reheat in a skillet, oven, or microwave until heated through.
