Description
A classic Green Bean Casserole with tender green beans in a creamy mushroom sauce, finished with crispy French fried onions. It is an easy, comforting side dish perfect for holidays and family dinners.
Ingredients
1 pound cut green beans, fresh and trimmed or frozen (454g)
1 (10.5-ounce/298g) can condensed cream of mushroom soup
¼ cup whole milk (60mL)
¾ teaspoon ground black pepper
1½ teaspoons salt
¾ cup crispy French fried onions (45g)
Instructions
- Preheat the oven to 350°F (175°C). Fill a large bowl with ice water and set aside.
- Bring a large pot of salted water to a boil over medium-high heat. Add the green beans and cook for 2 to 3 minutes, stirring occasionally, until tender and bright green.
- Transfer the green beans to the ice bath with a slotted spoon. Cool for about 2 minutes, then drain thoroughly to remove excess water.
- In a large mixing bowl, stir together the condensed cream of mushroom soup, whole milk, black pepper, and salt until smooth.
- Fold the cooled, drained green beans into the mushroom mixture until evenly coated.
- Transfer the mixture to a 1½-quart casserole dish and spread into an even layer.
- Bake for about 30 minutes, until heated through and bubbling around the edges.
- Remove from the oven, stir the casserole, and evenly scatter the crispy French fried onions over the top.
- Return to the oven and bake for another 5 minutes, until the onions are crisp and golden brown.
- Let the casserole rest for a few minutes before serving.
Notes
Frozen green beans can be used in place of fresh beans; thaw and drain them thoroughly before adding to the sauce.
For a cheesy variation, stir shredded cheddar cheese into the mushroom sauce or add cheese beneath the fried onion topping.
For extra mushroom flavor, sauté sliced fresh mushrooms in butter and fold them into the casserole. Garlic or diced onion can also be added.
Add cayenne pepper, red pepper flakes, or smoked paprika for extra heat or smoky flavor.
Seasoned breadcrumbs or crushed buttery crackers can replace the French fried onions for a different crunchy topping.
To make ahead, assemble the green beans and mushroom sauce, cover, and refrigerate. Add the crispy onions near the end of baking.
Store leftovers in an airtight container in the refrigerator for 3 to 4 days.
Reheat at 350°F (175°C) until hot, adding fresh crispy onions during the final few minutes if desired.
