Ingredients
3 medium-large ripe bananas, mashed
2 large eggs
2 tablespoons milk
1 teaspoon vanilla extract
1 3/4 cups oat flour
2 tablespoons cacao powder
1 teaspoon baking soda
1/4 teaspoon salt
2 ounces dark chocolate, melted
2 tablespoons mini chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
- In a large bowl, mash the bananas, then stir in the eggs, milk, and vanilla extract until smooth.
- In a separate bowl, whisk together the oat flour, cacao powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined.
- Fold the melted dark chocolate into the batter until evenly incorporated.
- Pour the batter into the prepared loaf pan and smooth the top.
- Sprinkle the mini chocolate chips over the batter and gently press them in.
- Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Allow the bread to cool completely before slicing. Store leftovers in an airtight container in the refrigerator.
Notes
Add chopped walnuts or pecans for extra crunch.
Use almond milk or oat milk and dairy-free dark chocolate for a dairy-free version.
Add 1 teaspoon espresso powder to deepen the chocolate flavor.
A pinch of cinnamon adds a warm flavor twist.
