Description

These Hot Honey Ground Beef Bowls combine roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, avocado, and a drizzle of hot honey for a balanced meal packed with sweet, spicy, and savory flavors.


Ingredients

1 1/2 pounds sweet potatoes, cubed

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

1 pound lean ground beef

1 tablespoon tomato paste

1 tablespoon taco seasoning

1/4 cup water

1 cup cottage cheese

1 large avocado, sliced

4 tablespoons hot honey

1 tablespoon chopped cilantro


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, black pepper, and smoked paprika until evenly coated.
  3. Spread the sweet potatoes on a baking sheet in a single layer and roast for 25 to 30 minutes, flipping halfway through, until tender and lightly caramelized.
  4. While the sweet potatoes roast, cook the ground beef in a large skillet over medium-high heat until browned.
  5. Stir in the tomato paste, taco seasoning, and water. Simmer for 3 to 4 minutes until slightly thickened.
  6. Divide the roasted sweet potatoes evenly among four serving bowls.
  7. Top each bowl with seasoned beef, cottage cheese, and sliced avocado.
  8. Drizzle hot honey over each bowl, garnish with chopped cilantro, and serve warm.

Notes

Substitute ground turkey or ground chicken for the beef if desired.
