Description

This Lemon Cream Chia Pudding with Oat Milk combines a creamy, lemon-infused chia pudding with a silky cashew cream topping. Naturally vegan, refreshing, and perfect for make-ahead breakfasts, snacks, or light desserts.

Ingredients

For the Chia Pudding Layer:

1/4 cup chia seeds

1 cup oat milk

Zest of 1 lemon

2 tablespoons maple syrup

1/4 teaspoon vanilla extract

1/4 teaspoon sea salt

For the Lemon Cashew Cream:

1 cup raw cashews, soaked and drained

1/2 cup oat milk

2 tablespoons maple syrup

2 tablespoons fresh lemon juice

1/4 teaspoon turmeric

1/2 teaspoon lemon extract

Optional Toppings:

Fresh blueberries, raspberries, or sliced strawberries

Extra lemon zest

Shredded coconut

Chopped nuts or granola

Instructions

  1. Prepare the chia pudding: In a medium mixing bowl, combine the chia seeds, 1 cup oat milk, lemon zest, 2 tablespoons maple syrup, vanilla extract, and sea salt. Whisk thoroughly for about 1 minute until evenly combined and free of clumps.
  2. Refrigerate the chia mixture: Cover the bowl and refrigerate for approximately 3 hours or overnight until thickened. Stir again after the first 10–15 minutes to prevent the chia seeds from clumping together.
  3. Soak the cashews: Place the raw cashews in a bowl and cover with hot water. Soak for approximately 1 hour, or overnight in room-temperature water. Drain thoroughly and discard the soaking water.
  4. Blend the lemon cashew cream: Add the soaked cashews, 1/2 cup oat milk, 2 tablespoons maple syrup, fresh lemon juice, turmeric, and lemon extract to a high-speed blender. Blend until completely smooth, thick, and silky, scraping down the sides as necessary.
  5. Assemble the pudding jars: Once the chia pudding has thickened, divide it evenly among four small serving jars or dessert glasses. Smooth the surface of each portion with a spoon.
  6. Add the lemon cream: Carefully spoon or pour the blended lemon cashew cream over each chia pudding layer, distributing it evenly among the four jars.
  7. Chill until set: Cover the assembled jars and refrigerate for another 3 hours to allow the lemon cream to firm up slightly and the flavors to develop.
  8. Garnish and serve: Just before serving, top with fresh berries, extra lemon zest, shredded coconut, chopped nuts, or granola as desired. Serve chilled.

Notes

Make ahead: Prepare the chia pudding and lemon cashew cream separately the night before, refrigerate in covered containers, and assemble when convenient.

Milk substitutions: Replace oat milk with unsweetened almond milk, soy milk, cashew milk, or coconut milk. Coconut milk creates a richer texture, while almond milk produces a lighter pudding.

Blueberry variation: Add fresh blueberries or blueberry compote between the chia pudding and lemon cream layers.

Strawberry variation: Place chopped fresh strawberries at the bottom of each jar before adding the chia pudding.

Coconut variation: Substitute some or all of the oat milk with coconut milk and garnish with shredded coconut.

Extra lemon flavor: Add additional fresh lemon zest or a small splash of lemon juice to the cashew cream, adjusting to taste.

Adjust sweetness: Increase the maple syrup slightly or add mashed ripe banana to the chia pudding for a sweeter version.

Cashew alternatives: Thick coconut cream or plant-based yogurt can replace cashews, although the flavor and texture will differ. Reduce the oat milk initially and adjust as needed.

Thickening tip: If the chia pudding is too thin after chilling, stir in 1–2 additional teaspoons of chia seeds and refrigerate until thickened.

Texture adjustment: If the pudding becomes too thick during storage, stir in a small splash of oat milk before serving.

Refrigerator storage: Store assembled pudding in airtight containers in the refrigerator for up to 4 days. Add fresh fruit and crunchy toppings immediately before serving.

Freezer storage: Freeze individual portions in freezer-safe containers for up to 1 month, leaving space for expansion. Thaw overnight in the refrigerator. Freezing may slightly change the texture.

Serving suggestion: Serve in clear glass jars to showcase the contrasting layers. Enjoy for breakfast, as an afternoon snack, or as a refreshing dessert.

No reheating required: This pudding is designed to be enjoyed cold.

Timing tip: Soak the cashews while the chia pudding chills to reduce overall preparation time.
