2 tablespoons olive oil
1/4 cup fresh lemon juice
1/2 teaspoon salt
1 teaspoon Dijon mustard
1 teaspoon maple syrup
3 cloves garlic, finely minced
1/4 cup plus 2 tablespoons water, or more as needed
Instructions
- Finely mince the garlic and place it into a bowl or jar with the tahini, olive oil, lemon juice, salt, Dijon mustard, maple syrup, and 1/4 cup water.
- Whisk everything together or shake the jar well until the dressing becomes smooth and creamy.
- Add the remaining 2 tablespoons of water little by little until the dressing reaches the desired consistency.
- Taste the dressing and adjust with extra maple syrup, salt, or water if needed.
- Serve over salads, grain bowls, roasted vegetables, or use as a creamy dip.
Notes
Add fresh parsley or cilantro for extra freshness.
Mix in cayenne pepper or red pepper flakes for a spicy variation.
A splash of soy sauce or tamari adds deeper savory flavor.
Thin the dressing with extra water to use as a sauce for wraps or sandwiches.
Store in an airtight container in the refrigerator for up to 1 week.
The dressing may thicken when chilled; stir in a little water before serving.
