Description

These Lemony Cucumber Cream Cheese Bites are a fresh, crisp, and creamy appetizer featuring a bright lemon-dill cream cheese spread topped with refreshing cucumber slices. Perfect for brunches, parties, or light snacks, they come together in just minutes with no cooking required.

Ingredients

4 oz cream cheese, softened

2 tbsp fresh dill, chopped

Zest and juice of 1 small lemon

Kosher salt, to taste

Freshly ground black pepper, to taste

12 small slices white or pretzel bread

1/2 English cucumber, thinly sliced

Extra lemon zest, for garnish (optional)

Additional fresh dill, for garnish (optional)

Instructions

  1. In a small bowl, combine the softened cream cheese, chopped dill, lemon zest, and lemon juice.
  2. Mix until smooth and creamy.
  3. Season with kosher salt and freshly ground black pepper to taste.
  4. Arrange the bread slices on a serving platter.
  5. Spread the cream cheese mixture evenly over each bread slice.
  6. Top each slice with thin cucumber rounds.
  7. Sprinkle lightly with extra lemon zest and black pepper.
  8. Garnish with additional fresh dill if desired and serve immediately.

Notes

Use whole-grain bread for additional texture and flavor.

Fresh chives or parsley can be substituted for dill.

Add thinly sliced radishes for extra crunch and color.

Use crackers instead of bread for a lighter appetizer.

Top with smoked salmon for a more substantial presentation.

Store the cream cheese mixture separately in an airtight container in the refrigerator for up to 3 days.

Assemble just before serving to keep the bread from becoming soft.
