Description

These easy Lentil Tacos feature tender brown lentils simmered with smoky spices, garlic, onions, and tomato paste, served in warm tortillas with crisp lettuce, juicy tomatoes, creamy avocado, and fresh lime. A hearty, budget-friendly, plant-based dinner that’s perfect for busy weeknights.

Ingredients

1 cup dried brown lentils, rinsed

2 ½ cups vegetable broth

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 small red bell pepper, finely diced

1 tablespoon tomato paste

2 teaspoons chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon cayenne pepper (optional)

Salt, to taste

Black pepper, to taste

8 small corn or flour tortillas

Shredded lettuce, for topping

Diced tomatoes, for topping

Sliced avocado, for topping

Fresh cilantro, for topping

Lime wedges, for serving

Salsa, for serving

Instructions

  1. Bring 2 ½ cups vegetable broth to a boil in a medium saucepan. Add the rinsed brown lentils, reduce the heat, and simmer gently for 25–30 minutes until tender but still holding their shape. Drain any excess liquid.
  2. While the lentils cook, heat the olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper and sauté for approximately 5 minutes, stirring occasionally, until softened.
  3. Add the minced garlic and tomato paste to the skillet. Cook for approximately 1 minute, stirring continuously, until fragrant and the tomato paste darkens slightly.
  4. Stir in the chili powder, ground cumin, smoked paprika, dried oregano, garlic powder, onion powder, and optional cayenne pepper. Season with salt and black pepper. Cook briefly until the spices become fragrant.
  5. Add the cooked, drained lentils to the skillet and stir thoroughly to combine with the seasoned vegetables. Cook over medium heat for another 3–5 minutes. Lightly mash some lentils with the back of a wooden spoon for a thicker filling, leaving most whole. Add a splash of vegetable broth if the mixture becomes too dry.
  6. Warm the tortillas in a dry skillet for 20–30 seconds per side until soft and pliable. Alternatively, wrap them in a slightly damp paper towel and microwave briefly.
  7. Place a generous spoonful of the seasoned lentil filling into each warm tortilla. Top with shredded lettuce, diced tomatoes, sliced avocado, fresh cilantro, and salsa.
  8. Arrange the assembled tacos on a serving platter with fresh lime wedges. Squeeze lime juice over the tacos and serve immediately while warm.

Notes

Brown lentils work best because they become tender while maintaining a slightly chunky texture. Avoid overcooking them.

For a quicker version, substitute approximately 2 ½ cups drained and rinsed canned lentils for the dried lentils. Skip the initial simmering step.

For spicier tacos, increase the cayenne pepper, add diced jalapeños, or serve with hot sauce.

For heartier tacos, stir cooked black beans into the seasoned lentil filling.

For a creamy topping, blend or mash avocado with lime juice, salt, and a little water to make an avocado sauce.

For gluten-free tacos, use certified gluten-free corn tortillas and check that the broth and seasonings are gluten-free.

For taco bowls, replace the tortillas with brown rice, quinoa, or shredded lettuce.

Roasted sweet potatoes, zucchini, or cauliflower make delicious additions to the filling.

Store cooked lentil filling in an airtight container in the refrigerator for up to 4 days. Keep tortillas and fresh toppings separate.

Freeze cooled lentil filling in freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator before reheating.

Reheat the filling in a skillet over medium-low heat with a splash of broth or water for 5–7 minutes, or microwave in short intervals until thoroughly heated.

Prepare the lentil filling 1–2 days ahead for convenient meal preparation. Assemble tacos just before serving to prevent soggy tortillas.

Serve with cilantro-lime rice, black beans, grilled corn, guacamole, pico de gallo, or a fresh green salad.
