Ingredients
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt

1 large egg

4 tablespoons butter, room temperature (for filling)
1 cup confectioners’ sugar
2 tablespoons maple syrup
Instructions
- Whisk together the flour, baking powder, and salt in a medium bowl and set aside.
- Beat the butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
- Add the egg and maple extract and beat until fully combined.
- Gradually mix in the dry ingredients until a soft dough forms.
- Divide the dough into two portions, flatten into disks, wrap, and refrigerate for at least 1 hour.
- Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
- Roll the chilled dough to 1/4-inch thickness on a lightly floured surface.
- Cut out maple leaf shapes and place them on the prepared baking sheets.
- Bake for 8 to 10 minutes, until the edges are lightly golden.
- Cool the cookies on the baking sheet for 3 minutes, then transfer to a wire rack to cool completely.
- For the filling, beat the butter until creamy, then add the confectioners’ sugar and maple syrup. Beat until light and fluffy.
- Spread the filling on the flat side of one cookie and top with another cookie to form a sandwich. Repeat with the remaining cookies.
