Ingredients
1 can (15 oz/400 g) chickpeas, drained and rinsed
1 can (15 oz/400 g) black beans, drained and rinsed
1 can (15 oz/400 g) cannellini beans, drained and rinsed
2 cups cherry tomatoes, halved or quartered
1 cup cucumber, diced
1 cup bell pepper, diced (red, yellow, or orange)
2 scallions, chopped
½ cup fresh flat-leaf parsley, chopped
7 oz (200 g) feta cheese, crumbled
4 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
Zest of 1 lemon
2 tablespoons apple cider vinegar
1½ teaspoons dried oregano
½ teaspoon salt, or to taste
Freshly ground black pepper, to taste
2 teaspoons honey (optional)
2 teaspoons Dijon mustard (optional)
Instructions
- Prepare the lemon-herb dressing: In a large mixing bowl, combine the extra virgin olive oil, fresh lemon juice, lemon zest, apple cider vinegar, dried oregano, salt, and black pepper. Add the optional honey and Dijon mustard if desired. Whisk thoroughly until smooth and well combined.
- Drain, rinse, and marinate the beans: Drain the chickpeas, black beans, and cannellini beans. Rinse thoroughly under cold running water and allow excess liquid to drain. Add the beans to the prepared dressing and gently toss until evenly coated. Let them marinate while preparing the vegetables.
- Prepare the fresh vegetables: Halve or quarter the cherry tomatoes, dice the cucumber and bell pepper into bite-sized pieces, finely chop the scallions, and roughly chop the fresh parsley. Keep the vegetables relatively uniform in size for the best texture.
- Combine the salad: Add the prepared tomatoes, cucumber, bell pepper, scallions, and parsley to the bowl of marinated beans. Gently toss with a large spoon or spatula until all ingredients are evenly distributed and coated with dressing.
- Add the feta cheese: Sprinkle the crumbled feta cheese over the salad. Carefully fold it into the mixture, avoiding excessive stirring to preserve the texture of the beans and feta.
- Adjust seasoning and serve: Taste the salad and adjust with additional lemon juice, salt, black pepper, or a drizzle of olive oil if needed. Serve immediately or refrigerate for 20–30 minutes to allow the flavors to develop. Toss gently before serving.
Notes
Make ahead: Prepare the beans and dressing up to one day in advance. Add the fresh vegetables, parsley, and feta shortly before serving for the best texture.
Storage: Store leftovers in an airtight container in the refrigerator for 3–4 days. Stir gently before serving.
Freezing: Freezing is not recommended because the tomatoes, cucumber, and feta lose their texture after thawing.
Serving temperature: Enjoy cold or at a cool room temperature. Remove from the refrigerator 10–15 minutes before serving if desired.
Bean substitutions: Replace any of the beans with kidney beans, navy beans, great northern beans, or pinto beans.
Vegan variation: Omit the feta or use plant-based feta cheese, and replace the optional honey with maple syrup.
Olive and artichoke variation: Add sliced Kalamata olives and chopped marinated artichoke hearts for extra Mediterranean flavor.
Avocado variation: Fold in one diced ripe avocado immediately before serving for additional creaminess.
Spicy variation: Add crushed red pepper flakes, diced jalapeño, or a pinch of cayenne pepper.
Extra protein: Add chopped grilled chicken breast for a heartier nonvegetarian meal.
Fresh herb variation: Substitute some of the parsley with fresh mint, dill, or basil.
Lower sodium: Choose low-sodium canned beans, rinse thoroughly, and reduce the added salt or feta cheese.
Prevent sogginess: Drain beans thoroughly, remove excess moisture from vegetables, and keep delicate ingredients separate when preparing ahead.
Serving suggestions: Serve as a main-course salad or alongside grilled vegetables, chicken, baked salmon, shrimp, hummus, warm pita bread, or tzatziki.
Portions: Makes 4 generous main-course servings or approximately 6 smaller side-dish servings.
Nutrition: Nutritional values are approximate estimates per serving based on four portions. Actual values vary depending on ingredient brands, drained bean weights, and optional additions.
