Ingredients
1 cup all-purpose flour
1 cup whole wheat flour
1 cup granulated sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
1 cup grated zucchini
1 cup grated carrot
1 Granny Smith apple, peeled and grated
3/4 cup raisins (optional)
1/2 cup shredded coconut
1/2 cup chopped pecans
3 large eggs
1/2 cup applesauce
1/2 cup vegetable oil
2 teaspoons vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease the cups.
- In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking soda, cinnamon, and salt.
- Stir in the grated zucchini, grated carrot, grated apple, raisins (if using), shredded coconut, and chopped pecans until evenly combined.
- In a separate bowl, whisk together the eggs, applesauce, vegetable oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix.
- Fill each muffin cup almost to the top with batter.
- Bake for 30 to 35 minutes for standard muffins or 16 to 18 minutes for mini muffins, until a toothpick inserted into the center comes out clean.
- Cool the muffins in the pan for a few minutes, then transfer to a wire rack to cool completely.
Notes
Swap pecans for walnuts if desired.
Replace raisins with dried cranberries or chopped dates for a different flavor.
Add a pinch of ground nutmeg or ginger for extra warmth.
Replace part of the vegetable oil with additional applesauce for a lighter muffin.
