Description

These No-Bake Samoa Cookies combine toasted coconut, gooey caramel, and rich chocolate into chewy, irresistible treats with no oven required. They’re perfect for holidays, parties, or an easy everyday dessert.


Ingredients

2 cups unsweetened shredded coconut

1 cup soft caramel candies (about 20 pieces)

2 tablespoons milk or heavy cream

1 cup semi-sweet chocolate chips

1 teaspoon coconut oil or butter

1 teaspoon vanilla extract

Pinch of salt


Instructions

  1. Toast the shredded coconut in a dry skillet over medium heat, stirring frequently for 5–7 minutes until golden brown and fragrant. Transfer to a plate and let cool.
  2. Combine the caramel candies and milk in a small saucepan over low heat, stirring continuously until smooth. Remove from the heat and stir in the vanilla extract and salt.
  3. Mix the toasted coconut into the caramel until evenly coated.
  4. Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the mixture onto the sheet and gently flatten into round cookie shapes.
  5. Melt the chocolate chips and coconut oil in a microwave-safe bowl using 20-second intervals, stirring between each until smooth.
  6. Dip the bottom of each cookie into the melted chocolate and place back on the parchment paper. Drizzle the remaining chocolate over the tops.
  7. Refrigerate the cookies for 15–20 minutes, or until the chocolate is set. Serve chilled or let stand at room temperature for 10 minutes for a softer texture.

Notes

Use dark chocolate instead of semi-sweet for a richer flavor.

Sprinkle flaky sea salt on top before the chocolate sets for a sweet-and-salty finish.

Add chopped toasted pecans or almonds for extra crunch.

For a dairy-free version, use dairy-free caramel and coconut cream.

Store in an airtight container in the refrigerator for up to 1 week.

Freeze with parchment paper between layers for up to 3 months and thaw in the refrigerator before serving.
